Creamy Vegan Red + White Sauce BBQ Pasta + 10 Reasons to DITCH DAIRY

Some red & white action in a creamy vegan red sauce form for a little Canada Day celebration!

This time the creaminess comes from something special:

ACTUAL CREAM, but vegan.

Earth’s Own Canada just came out with a cooking cream! Made from Canadian Oats.

And lemme tell ya, it does the job.

Just use it like you would use dairy cream, and it cream-ifies anything.

Usually, I make cream from cashews (or sunflower seeds) like this recipe (just add a little more liquid). Or even white beans made into a cream sauce.

But, this cream makes it ridiculously easy, and extra creamy.

(Did you know oats use seven times less water than dairy?)

Better for the environment, better for the cows, better for you, PLUS it does the job. Win win win, WIN.

It’s BBQ season too, so fire up that barby and throw some plants on it, create a creamy sauce with ease, and you’re off to the delicious pasta races.

🥛 10 Reasons to ditch dairy and embrace dairy alternatives instead:
➖baby calves belong with their emotional mama cows⠀
➖ 65-100% of people are lactose intolerant⠀
➖ mama cows don’t deserve to be forcibly impregnated over and over

Creamy Red Sauce Veggie Pasta

A creamy vegan red sauce pasta packed with BBQ'd veggies.

Serves: 5
Ingredients
  • 2 yellow or sweet onions, sliced
  • ¼-1/2 cup Earth's Own Cooking Cream
  • Tomato pasta sauce (used roasted garlic from Neal Brother's)
  • 400-500g whole grain pasta of choice
  • 2 red peppers, chopped
  • 2 zucchinis, chopped
  • 9 mushrooms (cremini/white), chopped
  • 1-2 tbsp balsamic vinegar
  • 3-4 vegan sausages of choice (we used Field Roast Italian)
Instructions
  1. Turn BBQ to 400F (or oven)
  2. Caramelize onions. Do do this without oil, just heat pan to medium, add sliced onions and let the pan brown. Add ⅛ cup of water to de-glaze the pan. Turn the heat down to simmer, and put the lid on. Let simmer for 20 minutes.
  3. Meanwhile, a bowl, mix together the veggies with balsamic. Add the veggies to a BBQ roasting dish (OR, bake them in the oven). BBQ for 30 minutes, mixing around halfway.
  4. Bring a pot of water to a boil. Add the pasta and cook according to directions.
  5. Add the sausages to the BBQ and grill according to the directions (about 4 minutes a side).
  6. Add cream and tomato sauce to the caramelized onions, and let simmer for another 5-10 minutes.
  7. Strain pasta, then pour it back into the pasta pot.
  8. Chop the sausages, and add them, the BBQ'd veggies and creamy red sauce to the pot. Stir until it's all slathered and delicious looking.
  9. Serve it up with some salad and a sprinkle of vegan parm!

Simple Creamy Tomato Pasta with Chick’n | Vegan + Oil-Free

A week night dinner saviour!

This pasta is super delish, and takes no time.

The creaminess? Hello cashews.

The simple-ness? Hello blender.

Pretend you’re a top chef for a minute with out actually having the credentials.

The biggest bonus of it all? The creaminess and decadent mouth feel we all crave… doesn’t have to come from the cow!

As for the vegan chick’n; it can be taken out completely, or replaced with any other kind of vegan meat you like. I’m thinking cauliflower ground round would be delish in here from Big Mountain Foods, or Gusta sausages, or Very Good Butcher’s bangers, or Field Roast sausages, or a little more indulgent Gardein or Yves ground round. Make this multiple times, and switch it up every time!

Why not add a side of steak? Cauliflower steak that is… Just douse a thick slice of cauliflower in your fave sauce (used Naked Coconut Teriyaki for this one), and sear them on the BBQ for 4-5 minutes a side!

Don’t forget to whip up some ridiculously easy vegan parm.

Ingredients

  • Creamy Tomato Sauce:
  • 1/2 cup cashews (soaked over night or a couple hours for the most creaminess)

  • 1 tbsp onion powder

  • 2 tsp oregano

  • 1 tsp basil (or 2 sprigs fresh basil

  • 1/4 cup nutritional yeast

  • 1/4 tsp salt

  • 1/2 tsp white pepper (optional)

  • 1 cup diced canned tomatoes

  • Pasta Fixin’s:
  • 1 medium sweet onion, diced

  • 2 cloves garlic, minced

  • 4-5 mushrooms of choice, sliced

  • 1 red pepper, diced

  • Meatiness: pre-cooked brown lentils or vegan chicken or ground round (Sweet Earth seitan strips, Very Good Butchers bangers, Gusta sausage, Field Roast weiners, Gardein chicken, Yves Veggie Cuisine Ground, Big Mountain Foods Ground

  • 2 handfuls kale or spinach, chopped

  • 300g whole grain pasta of choice (choose one with a couple of ingredients only… like brown rice or quinoa or chickpeas and water)

Directions

  • Turn pan to medium heat, add onions and let brown. Add a splash of water to de-glaze the pan. Then add in the pepper, mushrooms and garlic. Let sauté 5 minutes (add a bit of water if it sticks)
  • Boil water for your pasta
  • Add the ‘meat’ of choice to the pan. Let brown and heat up for 5-10 minutes while stirring periodically
  • Cook pasta according to directions
  • Meanwhile, make the creamy tomato sauce: Add all pasta sauce ingredients to the blender and whizzzz until smooth
  • Add the sauce to the veggie and ‘meat’ pan, stir to combine
  • Strain your pasta, then add that to the loaded pan too. Give it a good stir
  • Blend up some 3 minute cashew parmesan, then serve up your dish with some basil leaves, parm, and maybe even some garlic bread (toast with vegan butter and garlic powder = easiest garlic bread ever).

Creamy Vegan Chipotle Sauce aka Everything Sauce

Always, ALWAYS have a sauce in arms reach. It just makes life so much easier.

So many options… this chipotle sauce… or this Garlic Cream Sauce, or Hollandaise Sauce, or Orange Sesame Sauce, or Cashew Cheese Sauce, or Curry Tahini Sauce, or this Chickpea Tahini Drizzle.

SO SAUCEY.

Now, back to today’s chipotle sauce.

This stuff is great to drizzle all over anything savoury to take it up to the next level on the yum-o-meter.

I personally love it on loaded potatoes, roasted veggies, beans n’ greens n’ grains, or in tempeh lunch wraps. YUM.

Where ever or how ever you use it, there’s no doubt that you’re gonna feel totally chef-y with little to no effort. Perfect.

Chipotle Cream Sauce aka Everything Sauce

A spicy, creamy, tofu-based sauce that will add wow-factor to any savoury dish!

Ingredients
  • 1 package firm tofu
  • 2 tsp chipotle (more if you like it even spicier)
  • ½ cup nutritional yeast
  • 1 clove garlic
  • juice of 1 lemon
  • ¾ cup of unsweetened almond or soy milk
  • pinch of salt
Instructions
  1. Add all ingredients to the blender, and blend until smooth!
  2. Drizzle on loaded potatoes, toona sandwiches, lunch wraps,pastas, roasted veggies, nachos, tacos...

Cheezy Chickpea Tahini Drizzle

Ahhhh the feeling of having that something in the fridge that will make any meal taste and look gourmét … Well, make this, and then you’ll get that warm fuzzy feeling. That feeling of… no matter what I make… it’s going to taste fantabulous with this drizzle-y goodness. This cheezy chickpea tahini drizzle is up there as one of my faves at the moment!

I love this because it’s not as heavy as making a tahini-only sauce.

Adding those chickpeas makes the sauce go further…meaning I can smother my dish even more liberally.

It really is all about the sauce. Dinners can be so incredibly easy when you have a pre-cooked grain, protein (bean, legume, tempeh, tofu), a bunch of greens or sprouts, and a whole lot of sauce.

Pro tip:

Each week, switch up the sauce, cook up a couple different grains and proteins, and use what ever raw veggies and greens that are on sale…and you have a quick, throw-together, uber nutritious, super delicious, stress-free DINS. You could even wrap this up and take it out to lunch.

Serves: 1 cup
Ingredients
  • ⅓ cup tahini
  • ⅔ cup chickpeas
  • 1 clove garlic
  • 1 tsp onion powder
  • 3 tsp tamari
  • 1 tbsp curry powder
  • juice of 1 lemon
  • ½-3-4 cup water
Instructions
  1. Blend all ingredients until smooth! I used the smaller blender attachment for my high speed blender. Add just enough water for it to be the consistency that you can drizzle.

Vegan Hollandaise Sauce

Nothing like a decadent, creamy, lemony, thick sauce to douse that vegan brunch with! This vegan hollandaise sauce is even delicious on dinner your plate (think taters & sauce, broccoli & sauce, glory bowls & sauce, burritos & sauce…)

Being plant-based, means falling in love with sauces. All the sauces.

Tomato-based, bean-based, cashew-based, tahini-based, nooch-based, miso-based, veggie-based… endless bases of sauciness.

Today’s all about this cashew raw vegan hollandaise.

It’s time to cure those creamy cravings with total satisfaction by drizzling this stuff over any savoury dish to create a culinary masterpiece.

Super simple.

Super delish.

With just 7 ingredients and a blender, you’ll be on your way to sauce o’clock, saucy heaven, 10 on the sauce-o-meter, 100% sauciness… You get it.

Benefits:

  • Cashews are packed with minerals, and dietary monounsaturated and polyunsaturated fats to help the body absorb the fat-soluble vitamins A, D, E, and vitamin K and produce fatty acids needed for yo’ brain!
  • NO DAIRY – this is a big plus. Typical hollandaise has a whole lotta butter and eggs. Replacing these two with cashews will help you prevent cancer, inflammation, acidity, weight gain and animal suffering 🙂 Go nuts.

Ingredients
  • ¾ cup cashews, soaked over night (or 10 minutes in hot water), then strained
  • ¼ cup lemon juice (juice of 1½ lemons)
  • ½ cup unsweeted, unflavoured plant milk (almond, coconut or soy)
  • ½ tsp garlic powder
  • 1 tbsp nutritional yeast
  • 1 tsp turmeric powder
  • ¼ tsp sea salt
Instructions
  1. BLEND! Seriously. That's it. Until smooth.
  2. Drizzle away.

✔️ Juice of 1 lemon
✔️ 1 tsp maple syrup
✔️ ¼ cup pickle juice
✔️ 1 garlic clove

🍽 Tamari Maple Dijon Baked Tofu

✔️ 1 block firm tofu, pressed & cubed
✔️ ¼ cup Dijon mustard
✔️ 1 tbsp maple syrup
✔️ ¼ cup tamari
✔️ 1 tsp garlic powder
✔️ 1 tbsp cornstarch (for crispier cubes)

👉 Whisk Dijon, maple syrup, tamari & garlic. Toss tofu in the sauce (marinate if you have time, or coat quickly if not). Sprinkle in cornstarch and toss again. Spread on a lined baking sheet and bake at 375°F (190°C) for 20 minutes, flipping halfway, until golden.

15 Minute Protein-Packed Vegan Pesto ChickUn Fettu 15 Minute Protein-Packed Vegan Pesto ChickUn Fettuccine 

1) Soak soy curls in water for 10 mins, then strain and pan-fry in olive oil & @bragg liquid aminos
2) In a pan, sauté 1 onion, lots of crushed garlic, 8-10 sliced mushrooms 
3) Add vegan pesto (used @love.legrand), nutritional yeast, and the pan fried soy curls to that pan. 
4) Boil pasta of choice (drop your fave pasta below… macaroni? Penne? Fettuccini?
5) Strain then pour pasta into the pan of goodness & mixy mixy
