A plate of comfort-food deliciousness in the form of Vegan Pulled NO-Pork Nachos!

There’s a plethora of options for cheese in this nacho-libré momento… more proof that leaning towards vegan eating is actually an abundant move, not a restrictive one.

The more you explore the different options for your nostalgically yummy dishes, the wider your foodie mind will be opened!

Instead of dairy mozzarella, you can either choose from a ton of different vegan mozz alternatives (check out Vegan Supply and order online internationally), or make yourself one of these whole food cheeses: Cashew Cheese, Carrot Potato Cheese Sauce, Mind Blowing Multi-Purpose Cheese Sauce (nut-free), or even this Lentil Cheese Sauce.

There are so many different ways to cheese up your nachos!

And let’s not forget about jackfruit and the miracle that it is. If you’remissing that pulled texture of pork, jackfruit is your answer. Upton’s Naturals makes a great BBQ jackfruit, or the Jackfruit Company. Otherwise, buy it plain and sauté with some flava flave (as seen below).

A big plate o' nachos to share with your buds! This jackfruit pulled pork brings the 'meatiness' to this vegan fun time. Make it easy by using store bought vegan cheese, or go for it and make your own like this nacho cheese sauce or

Serves: 4
Ingredients
  • 1 package of pre-marinated BBQ jackfruit(or, use plain and sauté it for 5 minutes with 2 tbsp tamari, 1 tbsp ketchup, 1 tsp molasses, 1 tsp garlic powder)
  • 1 package of vegan mozzarella, shredded (we used Daiya's new mozzarella shreds, but you could also use this Alfredo Sauce!)
  • OR make your own Nacho Cheese Sauce or this Carrot Potato Cheese Sauce, or this Multi-Purpose nut-free Cheese Sauce, or this Cashew Cheese Sauce
  • 2 green onions, chopped
  • 10 kalamata olives, sliced
  • Organic Corn Tortilla chips
  • Salsa, 1 cup
  • 2 Avocados
  • Juice of ½ lime
  • 1 clove garlic, minced
  • ⅛ of a red onion, diced
  • S + P
Instructions
  1. Pre-heat oven to 250F
  2. If your jackfruit is plain, follow the above ingredients and sauté jackfruit
  3. Spread a layer of chips, top with a generous sprinkle of cheese, a few onions, olives and pieces of jackfruit.
  4. Do it again! It's all about the layering.
  5. Once the top layer is done, and topped off with cheese, bake for 10 minutes.
  6. Then broil for 2 minutes on low.
  7. Meanwhile, make your guacamole: Smash avocado with lime juice, garlic, red onion and salt n' pepper to taste.
  8. Serve it up with salsa and guac on the side.

BBQ’d Cheesy Sweet Potato Pierogies | Vegan

Little packages of goodness!  Yup, Cheesy Sweet Potato Pierogies in all their glory, and completely veganized.

Top it all off with some Tofutti or cashew sour cream and caramelized onions to impress any fantastic Polish grandma in your life.

This one’s fun to make with kids, because I’ll admit, it takes some steps. Easy steps, yes, but they just take a bit of love and time to go through. So, throw on that cute apron, crank up the tunes and call your little buddy up to join the pierogi party (thanks Ava!)

This recipe makes 40 incredibly satisfying pierogies (8 servings-worth), so you can boil & freeze them, and say goodbye to those last minute weeknight dinner freak outs in the near future.

Cheesy Sweet Potato Pierogies | Vegan

A comforting, flavourful favourite, veganized! Filled with sweet potatoes and cashew cheese, and topped off with caramelized onions and cashew sour cream. *Prep time doesn't include the overnight soaking time for the cashews!

Serves: 40 pierogies
Ingredients

  • Dough:
  • 3 cups all purspose flour
  • ½ tsp salt
  • ⅓ cup coconut oil, melted
  • ¾ cup - 1 cup water

  • Sweet Potato Filling:
  • 1 large sweet potato, chopped
  • ½ tsp smoked paprika
  • ⅛ tsp salt
  • 1 tsp onion powder
  • 2 cloves garlic, minced

  • Cashew Cheese:
  • 1 cup raw cashews, soaked for at least 2 hours (or overnight), drained and rinsed (**** If making cashew sour cream, soak 2 cups of cashews)
  • ¼ cup nutritional yeast
  • 2 tbsp freshly squeezed lemon juice
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper
  • ⅛ cup water (more if needed for blending)

  • Extras:
  • ½ cup chives, minced
  • 1 large onion (red or sweet), sliced thinly
  • Cashew Sour Cream
Instructions
  1. Make the dough: in your electric mixer, or a large bowl, stir together flour, salt and coconut oil. Then add in water a little bit at a time until a ball forms. If too dry, add more water, if too wet, add more flour.
  2. Knead the dough for 4 minutes on a floured countertop, then wrap it in sarran wrap and place it in the fridge for 30 minutes. Now it's time to make the two fillings.
  3. Make the sweet potato filling, steam the sweet potato for 8 minutes. Transfer to a bowl, then mash in the rest of the filling ingredients until they're evenly distributed and the sweet potato is smooth.
  4. Make the cashew cheese, blend all cashew cheese ingredients together in your food processor until smooth.
  5. Roll out the dough on a large floured counter until it's 2-3mm thick. Using a mason jar lid, press as many circles in the dough as possible to create the pierogi circles. Pull up the in between extra dough, roll it out again and make more circles. Repeat until all dough is used up.
  6. Fill em' up! Use an ice cream scooper to place a ball with half sweet potato filling and half cheese filling onto each pierogi circle (just off center). Wet the edge of one half of the pierogi, and fold the other half over the filling to the wetted edge. Press the edges together with a fork to form a half crescent pierogi shape.
  7. Bring a pot of water to a boil. Place about 10 pierogies in to the boiling water at a time (making sure they don't stick to the bottom) and let boil 7 minutes. Set aside in a strainer. Repeat until all are boiled.
  8. Meanwhile, sauté onions: heat a pan to medium heat, add onions, let cook for 2 minutes, deglaze with balsamic vinegar. Let sauté for 8 minutes, adding more balsamic if they're sticking.
  9. Option 1: BBQ! Set BBQ to 400° and bake pierogies on a cookie sheet with parchment or a reusable parchment sheet for 10 minutes, flipping once.
  10. Option 2: Fry! Bring a pan to medium heat, use a tsp of coconut oil, then place the pierogies into the pan for 3 minutes a side.
  11. Option 3: Freeze! Let pierogies cool in a single layer on a baking sheet in the fridge or freezer. Then place in a reusable ziplock and freeze for up to 6 months (if you don't eat them before that).
  12. Serve them up with this Cashew Sour Cream, frech chives, and sautéed onions! With a side of greens (I steamed broccoli, and mixed it with tamari and nooch, YUM).

Vegan Turmeric Cheese Log

This was a hit as an appy at the last dinner party!

Especially with Eve’s Crackers on the side.

The vegans were all over it, and the surprised words ‘it tastes like cheese’ were heard over and over again from the non-vegans.

Success!

The beauty Holly (who has done some amazing work with Peta over the years) loved it, plus, I was finally able to put the neglected cheese knife to great use.

This version of nut cheese making is the quickest and easiest you will find.

There are longer versions of how to make nut cheeses, some as long as one week of fermenting!

Fermenting the nuts for the cheese will give it more of a tangy, aged cheese taste, but when you’ve got a day to figure out what to bring to impress your pals, this is a great go-to recipe to curb those cheese cravings.

I’d still start it the day before you will be serving it up, just so you get all the soaking time possible.

Just soak and strain the cashews, blend the ingredients, strain in a cheese cloth, let it chill in the fridge & roll shape it up.

The turmeric in this mixture tricks you into believing you’re eating the orange cheddar you used to indulge in.

Get creative with the herbs that make the outer layer. What fresh herbs are hiding in that fridge of yours? Use them!

Benefits:

–Cashews are packed with minerals and antioxidants. Because of the magnesium and calcium, your nerves and bones will thank you. The copper in these babies will ward of colon cancer and help keep your hair vibrant!

–Turmeric is nature’s anti-inflammatory. All disease starts with inflammation within the body, so warding off inflammation is the key to longevity and health! Eating turmeric with a tiny bit of pepper makes curcumin (the active ingredient in turmeric) WAY more easily absorbable for your body,

–Nutritional yeast (NOOCH) is a vegan’s best friend when it comes to anything cheezy. Plus it’s packed with B12, all vegans and non-vegans need more of this! B12 is found in microbes in the soil (which is eaten by animals, then humans eat the animals), but the soil is becoming depleted of nutrients and vitamins, so the best way to ensure you’re receiving all the B12 you need is to eat fortified B12 foods (like some plant-based milks), eat nutritional yeast every day, or be safe and take a B12 supplement. But, ‘Nooch’ is the most delicious way to get your B12.

Vegan Turmeric Cheese Log

Serves: 6-8

Time: Actually ‘doing stuff’ time: 10 minutes. Soak and chill time: 7-24 hrs

Ingredients:

Cheeze:

  • 1 cup raw cashews, soaked overnight, then strained and rinsed (OR if you’re in a hurry, pour boiling water over your raw cashews and let soak for 1.5 hours)
  • 1/4 cup nutritional yeast
  • 3 cloves garlic
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp turmeric powder
  • zest of half lemon (zest before cutting and sweezing the lemon)
  • juice of 1 lemon

Outer herbs:

  • 2 tbsp fresh thyme, minced
  • 2 tbsp fresh chives, minced

Directions:

  1. Blend all ‘cheeze’ ingredients together until smooth and creamy in your food processor (scrape down sides)
  2. Place mixture into two layers of cheesecloth or a nut milk bag and squeeze into desired shape (you can re-shape after too). Tighten by twisting the mesh cloth.
  3. Leave your ‘cheeze’ in the fridge over a colander (some liquid may drip out) for at least 6 hours (the longer the better!)
  4. Take it out of the cheese cloth and roll it into a log, then coat it with thyme and chives (a bit messy but helps the log keep it’s shape!)
  5. Serve with your favourite crackers, chips, or veggies! I’ve used my friend Eve’s Crackers here!

Thai Cashew Cream Cheese Endive Boats | Raw Vegan

These 2-bite boats are a fun and fresh way to start off a dinner party.

So simple to put together and really, really delicious.

They have a pop of sweet and tangy flavours with a creamy and crispy textures.

Verrrrry interestingly delicious!

Endives make the perfect boat for just about anything when it comes to small bites. There’s something so fancy about holding a canapé in your hand and savouring each bite.

These guys are great to make ahead of time, and I highly suggest you make enough Thai curry cashew cream cheese to keep in the fridge for that cheese craving later on (amazing in sandwiches, wraps, or with crackers).

Benefits:

Endives have vitamin A, which is great for eyes, plus helps maintain healthy mucus membranes and skin. B vitamins are in there too to help with healthy metabolism of fats, proteins, and carbohydrates.

Cashews help lower blood pressure, and helps hair, bones and nerves. Too much of a good thing in this case isn’t ideal though. Cashews are decadent and packed with calories from beneficial fat, so too many of these creamy morsels could lead to some extra pounds. In this recipe, we just use a small dollop on each endive for decadence and thai flavour!

Mango help lower cholesterol, clear skin, alkalinize the body, improve digestion, improve eye health, and combat cancer.

Thai Cashew Endive Boats

Time: 20 minutes (must soak cashews before hand for a few hours or overnight)

Serves: 20 plus extra cashew ‘cheeze’ is left over for you!

Ingredients:

  • Two heads of endives
  • 2 cups cashews, soaked overnight or for 3 hours in water then drained
  • 3 tbsp nutritional yeast
  • 1/4 cup water, or just enough to blend cashews
  • 2 tbsp lemon juice
  • 2 tbsp green curry paste
  • 1 tsp onion powder
  • 3/4 cup cilantro
  • 1 mango, sliced thinly in batonnet cuts
  • 2 green onions, chopped diagonally

Directions:

  1. Make the Thai cashew cream cheese: Blend the soaked cashews, lemon, and water (not too much!) in food processor until cream cheese consistency. Then blend in curry paste, onion powder, and cilantro.
  2. Fill your endives with cashew cheese, mango, green onion. Top with cilantro.
  3. Store your extra cream cheese in the fridge for about a week in a sealed jar.

🍽 Tamari Maple Dijon Baked Tofu

✔️ 1 block firm tofu, pressed & cubed
✔️ ¼ cup Dijon mustard
✔️ 1 tbsp maple syrup
✔️ ¼ cup tamari
✔️ 1 tsp garlic powder
✔️ 1 tbsp cornstarch (for crispier cubes)

👉 Whisk Dijon, maple syrup, tamari & garlic. Toss tofu in the sauce (marinate if you have time, or coat quickly if not). Sprinkle in cornstarch and toss again. Spread on a lined baking sheet and bake at 375°F (190°C) for 20 minutes, flipping halfway, until golden.

15 Minute Protein-Packed Vegan Pesto ChickUn Fettu 15 Minute Protein-Packed Vegan Pesto ChickUn Fettuccine 

1) Soak soy curls in water for 10 mins, then strain and pan-fry in olive oil & @bragg liquid aminos
2) In a pan, sauté 1 onion, lots of crushed garlic, 8-10 sliced mushrooms 
3) Add vegan pesto (used @love.legrand), nutritional yeast, and the pan fried soy curls to that pan. 
4) Boil pasta of choice (drop your fave pasta below… macaroni? Penne? Fettuccini?
5) Strain then pour pasta into the pan of goodness & mixy mixy
