Pink Banana Oat Pancakes with Maple Cacao Drizzle

Que the Jack Johnson and bring on Sunday morning! ….And with Valentine’s Day in our midst, then you’re in luck, because we’re flauntin’ the pink today with these banana oat pancakes!

These pancakes are so simple, it’s stupid.

Too easy not to make and packed with whole-food ingredients.

Here for it!

Top it off with a cacao maple drizzle, serve it to your Valentine, and be ready for a proposal.

It’s all about tha base bout’ tha base (que song here).

I’m talking about just 3 ingredients: ripe bananas + oat flour + plant milk.

Vanilla and cinnamon are always a must when I’m whipping up some flapjacks, so we’ll throw some of that in there, too.

Once you have that blended up, feel free to get creative.

Today, I went with beet powder + vegan chocolate chips!

Maybe tomorrow calls for antioxidant boosters, turmeric + blueberries (bonus recipe below).

The next day… Cacao powder + raisins? Maca powder + strawberries?

Whatever that creator within you comes up with, your pancake will no doubt be delicious and ready before Jack finishes off his guitar solo.

Easy Banana Oat Pancakes with a Valentines Flare!

Recipe type: Breakfast
Serves: 8
Ingredients
  • 2 cups of oats (gluten-free if needed)
  • 3 bananas, spotty and ripe
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • ¼ cup Daily Greens Powder (optional, but a good way to get in potent greens)
  • 1 tbsp beet powder (order from Organic Matters or Amazon)
  • ½ cup vegan chocolate chips
  • ½-3/4 cup almond milk
Instructions
  1. Add oats to blender. Blend into a flour
  2. Add the rest of the ingredients, except chocolate chips, blend until smooth
  3. Gently chocolate chips into the batter (or sprinkle on top after flipping the pancakes)
  4. Heat a pan on low heat (level 2-3)
  5. Spoon pancakes into pan and cook for 3-4 minutes (until you see little bubbles appearing)
  6. Flip, then cook for another 2 minutes
  7. Meanwhile, make the cacao maple drizzle by whisking together a little extra Chocolate Protein and maple syrup until well combined!
  8. Go the extra mile and serve it up with Coco Whip(and fruit and drizzle!)

Another option!

Turmeric Blueberry Banana Pancakes

Serves: 2

Making time: 3-5 minutes

Cooking time: 6 minutes per batch

Ingredients:

  • 2 cups oats (gluten free if needed)
  • 3 bananas, spotty and ripe
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 thumb turmeric root (about 2 cm long) OR 1 tsp turmeric spice
  • 1/4 cup Protein Powder (Complement has the cleanest 5 ingredient vegan protein powder around)
  • 1 tiny pinch black pepper (for turmeric absorption)
  • 1 cup blueberries
  • 1/2-3/4 cup almond milk

Directions:

  1. Add oats to blender. Blend into a flour
  2. Add the rest of the ingredients, except blueberries, blend until smooth
  3. Mix blueberries into batter
  4. Heat pan on low heat (level 2-3)
  5. Spoon pancakes into pan and cook for 3-4 minutes (until you see little bubbles appearing)
  6. Flip, then cook for another 2 minutes
  7. Pour over maple syrup and top with fruit
  8. Go the extra mile and pour over some delicious chocolate sauce from the Hot For You Bites chocolate layer

Sweet Potato Toasts | Easy GF Snack

It’s toast.

But it’s potato.

But…it’s toast.

Sweet potato toasts!

When I first saw this, I thought…GENIUS.

Alllllmost as genius as when Einstein said:

“Nothing will benefit health or increase chances of survival on earth as the evolution to a vegetarian diet.”

Or this:

“Our task must be to free ourselves by widening our circle of compassion”

Anyways, sometimes it’s the simplest combination of action, taste and texture that creates the best experience.

Action: Toast

Taste: Savoury sweetness.

Texture: Chewy tastiness.

These little pieces of art are perfect for summer. You don’t have to touch your oven to enjoy your taters. And, if you’re like me, sweet potato is a must for every season.

Get creative with your toppings (perfect for the kidlets to join in on).

Go sweet … cover it in berries.

Go savoury … smother it with avo & nooch.

Go tangy … sprinkle it with sauerkraut.

Go spicy … sriracha!

Bangin’ Banana Tahini Chaga Granola (Oil & Refined Sugar-Free)

Who doesn’t love a good crunch in the mornin’?

I do.

But, I don’t love all the sugars + oils snuck into a typical store-bought granola…

Enter: THIS BANGIN’ BANANA TAHINI CHAGA GRANOLA

This recipe is:

-Easy

-Delish

-Free from refined sugars and oils

-Made up of whole foods baby!

Pour some milk on top (Earth’s Own new 4 ingredient oat milk are a fave), or sprinkle it on top of your coco yogurt bowl or smoothie bowl. How ever you enjoy granola, you’ll be able to enjoy it knowing you’re packing your body with quality nutrients and good energy. 

As for the mushroom part, totally optional, but any opportunity I can get, I’ll add in mushroom powders to my recipes. 

The Stay Wyld Organics Mushroom powders are North American sourced, steamed for best absportion, organic, and packaged in glass with a tin lid (plastic-free packaging for the win). I’m using Chaga here, but really could throw all 5 in this recipe!

 

Turkey Tail, Cordyceps, Lion’s Mane, Reishi AND Chaga all give you a mega dose of antioxidants and act as adaptogens in your body, bringing your body back to homeostasis (balance). They’re also immune-boosting and good for the gut.

Matcha Date Overnight Buckwheat Oats | 2 Ways

If easy is what you’re lookin’ for. Search no further.

This bowl of goodness is just a few easy steps away.

It’s packed with nutrients and energizing pizzazz!

Plant protein, antioxidants, and lots’a fibre make this a fantastical breakfast to fuel what ever your day has ahead.

You can even make this into grab and go Jules Fuel balls.

For those of you who don’t know, I’m a cereal entrepreneur, literally.

I started Jules Fuel in 2012 after I retired from 6 years on the Ski Cross World Cup tour with the National team. I used to bring a similar breakfast blend on the road with me, so I knew that I’d at least have a healthy breakfast. I decided to bag it up, hit up Farmer’s Markets and grocery stores to share my cereal with those in search of a healthy, quick, delish breaki!

The original (on the left) is the Quinoa Breakfast Blend aka quinoa oatmeal packed with superfoods!

If you want to make it yourself here’s what’s in it: quinoa, oats, goji berries, chia seeds, flax seeds, pumpkin seeds, sunflower seeds and raisins, that’s it.

This one needs 10 minutes of cooking, and you’re good to go (I always make the whole bag, or a week’s worth, so it’s ready to bowl up in the morning with my fave toppings).

The 2 new Jules Fuel cereals on the block are Matcha Date or Blueberry Cacao Overnight Buckwheat Oats.

These buckwheat oats bring the base of buckwheat, oats and a tiny bit of coconut sugar, and they’re topped off with either blueberry powder and cacao nibs, or matcha powder and date chunks (my personal fave).

There’s no cooking needed for these ones! Just soak these power oats overnight in your favourite plant milk (I love unsweetened vanilla soy or oat milk) and see ya in the AM!

I mean…. it’s too easy not to!

Of course, you can cook them if you want!

  • 1 cup Jules Fuel overnight buckwheat oats (or your own mix of oats, buckwheat, a little coconut sugar and favourite superfoods)
  • ¾-1 cup plant milk
Instructions
  1. Add oat mixture and milk to a mason jar or tupperware. Shake it up.
  2. Keep in the fridge for at least 1 hour or over night.
  3. Top it with your favourite toppings: coconut yogurt, fruit, maple syrup, or nuts!

  • 1 cup Jules Fuel Matcha Date Buckwheat Oats
  • 1 cup plant-milk of choice
  • 1 ripe banana, mashed

  • Toppings options:
  • Molasses
  • Maple syrup
  • Berries or any other fruit
  • Coconut flakes
  • Coconut (or almond/soy/cashew) yogurt
  • Nut butter
  • Chopped pecans/walnuts/brazil nuts
Instructions
  1. Heat the Jules Fuel, milk and banana up on the stove at medium heat. Stir and cover for 5 minutes.
  2. In the meantime, get your toppings ready to party.
  3. Serve the buckwheat oats up in your favourite bowl, and top it to the nines. Indulge.

Vegan Quiche with Smoked Tofu & Cauliflower Crust

Diner-approved vegan brunchin’. This comfort-style vegan quiche has Father’s Day breaki written all over it.

An egg-y texture, with smokey bits and creamy hollanadaise, all on a cauliflower crust.

Comfort food with benefits… and lots’a tastiness.

Plus… it’s soy-free, gluten-free & oil-free (triple bonus).

I’ve been pumping out the treats over the last few weeks… cardamom muffins, cookies, parfaits, matcha cheese cake, so I had the urge to share some savoury goodness with you so you can create a masterpiece for your Pa this weekend.

Depending on the preferences of that Dad in your life, either take the savoury route with this quiche, or this omelette, or sweeten things up for the special occasion with these simple pancakes.

‘Quiche’ …the first thing that came out of Davey’s mouth when I asked him for a savoury comfort food recipe idea. Davey’s my professional taste-tester and cuts all BS when it comes to telling me whether it tastes good or not… And as the ‘cheese egg king’ before we went plant-based, he gave this quiche a 10/10 for eggy-ness and tastiness.  Winner.

The lemon-y hollandaise takes it to the next level on the brunch-0-meter.

When I told my G-Ma I was whipping up a vegan quiche, she didn’t get it. Quiche usually means eggs, cheese, butter, bacon. It’s pretty much an oxymoron. But the code is cracked, folks.

Plus, the cauliflower crust brings this quiche to a new level. It’s a cake-y crust with zero gluten and a good dose of cruciferous awesomeness.

Benefits:

  • Cauliflower is so versatile. Cauliflower Roast, Buffalo Cauli Wings…and this crust is totally usable for pizza crust too. Don’t let the white colour fool ya, cauli is packed with nutrients, vitamins, and minerals. Plus it’s part of the cruciferous fam-jam (known for cancer prevention).
  • Chickpea flour is the magical ingredient in the filling to create that egg-y texture. It’s packed with amino acids, and gluten-free for those with sensitivities.
  • Veggies!!! They’re good for ya. Duh. You can pack in as many veggies as you want in the filling and they’ll be surrounded by delicious egg-like texture and go down real easy.


Vegan Quiche with Cauliflower Crust

A quiche for an occasion... veganized! A flavourful filling all on top of a gluten-free cauliflower crust.

Recipe type: breakfast, brunch, lunch, comfort food
Serves: 8
Ingredients

  • Cauliflower Crust: (or use any other kind of crust you like)
  • 3½ cups cauliflower, chopped, steamed 10 minutes (until soft)
  • 3 flax eggs (1/4 cup ground flaxseed meal + ¾ cup water in a jar, let sit for 5 minutes)
  • 1 cup flour (I used amaranth)
  • ¾ cup nutritional yeast
  • 1 tbsp garlic powder
  • 2 tbsp tahini
  • 1 tsp oregano
  • ½ tsp sea salt
  • ¼ tsp black pepper

  • Filling:
  • 1½ cup chickpea flour
  • 1¼ cup water
  • ¼ cup nutritional yeast
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp turmeric powder
  • pinch of black pepper
  • 1 tsp black salt (optional - but an amazing ingredient for that 'eggy' taste)
  • 6 cherry tomatoes, halved
  • 1 red pepper, diced
  • 4 cremini or white mushrooms, sliced
  • ¼ cup red onion, diced
  • handful spinach
Instructions

  1. Make Crust:
  2. Pre-Heat oven to 400°F
  3. Place steamed cauliflower in a cheese cloth or nut milk bag. Let sit in the fridge for a few minutes (until you can handle it without yelping). Then squeeze as much liquid out of cauliflower into the sink as possible.
  4. In food processor, pulse the cauliflower, flax eggs, flour, nutritional yeast, tahini and spices until a creamy dough forms.
  5. Press and spread dough with a spatula on a 9-inch pie dish (non-stick, or lined with parchment paper) along the bottom and up the sides about ¼ inch thick.
  6. Bake crust for 20 minutes.
  7. At the same time, spread the mushrooms, red pepper, and cherry tomatoes on a parchment-lined (or reusable baking sheet-covered) baking sheet. Bake for 15 minutes.
  8. Meanwhile, make the filling: blend or whisk together chickpea flour, water and spices until smooth. Then stir in the roasted veggies, spinach, onion (and if you're fine with soy, add in ¼ cup of chopped smoked tofu YUM)
  9. Pour filling into the crust.
  10. Bake for 45 minutes.
  11. Remove and let cool for at least 10 minutes.
  12. Serve each slice with a drizzle of the hollandaise sauce from this recipe and a basil leaf or two:)

✔️ 1 tbsp maple syrup
✔️ ¼ cup tamari
✔️ 1 tsp garlic powder
✔️ 1 tbsp cornstarch (for crispier cubes)

👉 Whisk Dijon, maple syrup, tamari & garlic. Toss tofu in the sauce (marinate if you have time, or coat quickly if not). Sprinkle in cornstarch and toss again. Spread on a lined baking sheet and bake at 375°F (190°C) for 20 minutes, flipping halfway, until golden.
