Easy Vegan Cashew Cheese Sauce | 7 Ingredients

The good ol’ days of broccoli and cheese sauce are making a comeback, this time in the form of this next-level raw vegan cashew cheese sauce.

Totally nostalgic…who’s with me on that?

In the attempt to get me to eat those veggies in any way possible… cheese sauce, and sometimes mayo, made it onto the plate beside those greens.

It worked like a dream, just like this new & improved eat-yo-veggies cashew cheese hack will.

Something special happens to broccoli when it’s paired with a creamy, tangy, cheesy sauce. Dip away with all the other veggies, and you’re easily munching away on greens like their goin’ outta style.

All you need to do for this recipe is soak the cashews, blend it all up, and then drizzle, spread, dip, scoop…

I’m all about the sauce.

Either one is perfect for a colourful side dish for a holiday like……. Easter!

Benefits:

  • Cashews are packed with healthy fats (monounsaturated and polyunsaturated) to help the absorption of the fat soluble vitamins (A, D, E, and vitamin K) found in the nutrient-dense greens. Plus, these healthy fats help brain development and memory!
  • Nutritional Yeast (NOOCH) is a vegan’s best friend. Not only does it taste cheesy, but it also is packed with Vitamin B12 (which comes from microorganisms in soil), the one nutrient that you might be lacking in on a vegan diet.
  • Turmeric is a magical ingredient. Not only does it change any recipe into a smashingly colourful dish, but it’s also one of the most powerful anti-inflammatory ingredients out there. Add a bit of pepper to increase the bioavailability of the curcumin in the turmeric by 2000%!

Answer that cheese craving with this super easy vegan cheese sauce, ready to be best friends with anything that calls for cheese. Pizza, pasta, veggies, nachos, you name it!

Ingredients
  • 1 cup raw cashews (soaked at least 30 minutes and rinsed)
  • ¼ cup nutritional yeast
  • 1 clove garlic, crushed
  • juice of 1 lemon
  • ⅛ tsp sea salt + pepper
  • ¼ tsp turmeric
  • ¼ cup + 2 tbsp plain unsweetened plant based milk (I used almond)
Instructions
  1. Blend all ingredients in high-speed blender until smooth! You might have to turn it off and scrape down the sides with a spatula every now and then...
  2. Use it for dipping, drizzling, spreading... anything! Pizza, pasta, cracker plates, or saucin' anything up!

St. Patrick’s Day Deep Green Cauliflower Spirulina Smoothie Bowl

St. Paddy’s Day is just around the corner, so it’s time to get in as much of the colour green as humanly possible with this cauliflower spirulina smoothie bowl.

Make this uber healthy, nutrient-dense breakfast so you can happily balance it out with that green beer later!

Warning: The energy you’ll receive from this bowl o’ goodness might have you dancing on tables to those Irish fiddles until the sun comes up.

This recipe is pretty much the most amount of nutrients you can fit into your blender, blended into a thick smoothie bowl and topped off with any kind of superfoods you have in the house!

Smoothie bowls are a go-to around here.

Smoothies are great too, but bowls are better. Why? Smoothies go down too quick (unless you’re mindfully paying attention to chewing your liquid). It’s good to take your time eating blended anything, and actually CHEW your smoothie. Sounds weird, I know. But, by chewing, your mouth releases saliva with amylase (the digestive enzyme for carbohydrates). This is where it all begins (digestion, that is), so if you skip this step of physically chewing, the food by-passes the mouth without the first initial breakdown of nutrients. This makes it harder on the rest of your body during the digestion process.

Chew yo’ smoothie!

You might be thinking… Cauliflower in a smoothie WHAT?! But seriously, it creates a creamy texture and adds mega benefits. We should be eating something from the cruciferous family on the daily (cauli, broccoli, cabbage, kale, brussel sprouts, bok choy, collard greens…), and this is an easy way to get it in ya.

Benefits:

  • Spirulina is one of the most detoxifying ingredients you can consume! It’s a blue green micro-algae with magical powers. Plus, it’s 60% protein (!) and packed with vitamins K1, K2, B12, A plus minerals iron, manganese and chromium. It’s extremely potent, so you don’t need much of it to reap the benefits. The antioxidants and phytonutrients will help decrease signs of aging and ward of disease and inflammation.
  • Cauliflower as I said earlier is a member of the cruciferous vegetable fam. This family is packed with disease-fighting phytochemicals, drastically lowering your rise of cancer and cell oxidation.
  • Greens of any kind are king when it comes to nutrient density. Chlorophyll, phytonutrients, antioxidants, fibre… these are all ingredients your body thrives on. You’ll be bursting with energy and vitality if you pack your mouth with greens at any chance you get.

I always wing it when it comes to smoothies! But, this gives you a good idea of proportions for a deep green smoothie bowl! Feel free to add more or less of anything, it will all work out. If you need more sweetness, add more dates or banana! Try to pack in as many green leaves as possible.

Ingredients
  • 2-3 kale leaves, de stemmed
  • 1 cup spinach
  • 1-inch thumb of ginger root
  • 2 frozen bananas (3 if they're small!)
  • 2 medjool dates
  • 1 cup frozen cauliflower
  • 1-2 cups frozen berries (your choice)
  • 1 tsp spirulina
  • 1½ cups vanilla almond milk, or thishemp milk

  • Optional add-ins:
  • More Greens if you can handle it! Spinach, cucumber, celery, romaine...
  • 1 inch thumb turmeric root
  • Water (if you want a drinkable smoothie)
  • Your favourite vegan protein powder
  • Carrot
  • Apple

  • Recommended toppings:
  • Raw cacao nibs
  • Coconut shreds
  • Jules Fuel Buckwheat Oats
  • Banana
  • Hemp seeds
  • Omega 3-6-9 oil (Udo's has a good blend, and an option with DHA too!)
Instructions
  1. Fill your blender with all the smoothie ingredients in this order: ginger, greens, cauliflower, spirulina, berries, banana, dates, almond milk.
  2. Blend on low-medium, and use your tamper to help the consistency become as smooth as possible. Add a bit of water if needed to help blend.
  3. If you don't have a tamper for your blender, just add a bit more liquid so it blends on it's own (you'll just have a runnier smoothie bowl)!
  4. Pour into your favourite bowl, and top it with your favourite toppings!

** You can use unfrozen bananas and cauliflower, but it won't be quite as creamy or delicious...

Jules Fuel Buckwheat Bliss Balls | Blueberry Cacao or Matcha

Meet your new travelling adventure buddies. These Jules Fuel Buckwheat Bliss balls are packed with superfood goodness with a mega-dose of antioxidants.


On the plane, in a camelback or pocketed on a ski day… they’ll save you and your low energy anywhere, anytime.
And they’re SO simple to make.
You’ll find some date ball recipes on here already like these Maca Date Balls or Hemp Coconut Balls , but these ones are special cuz they’re Jules Fuelled ;0)


My cereal company recently turned into a line of superfood breakfasts. The original (Jules Fuel Quinoa Superfood Oatmeal) has been breaking fasts since 2013. But, just last month 2 new Buckwheat Overnight Oat products graced the grocery store shelves!


Your choice of…Matcha Date Overnight Buckwheat Oats, or Blueberry Cacao Overnight Buckwheat Oats.


Both are bursting with antioxidants, plant protein, fibre, phytonutrients and flava flave. On the bag I tell guide you to soak your serving of buckwheat oats overnight in your favourite mason jar with your favourite plant-based mylk.
But today we’re switching it up a bit.


Adding dates to the mix allows you to roll it up into a bunch of 2-bite Jules Fuel balls for all your on-the-go energizing needs.
The buckwheat groats stay in tact to add a satisfying crunch to the texture, and the only thing you have to do is blend and roll. Triple (or quadruple) this recipe and keep them in your freezer for months!


Benefits:

  • Buckwheat is packed with all essential amino acids, creating a protein packed grain that gives you long lasting energy and regulates blood sugar levels by mimicking the action of insulin. It’s also alkaline to your body, and packed with B vitamins (to help your nervous system function optimally).
  • Blueberry & Cacao are both incredibly high in antioxidants to deactivate free radicals in your body (which are the culprits that lead to disease) plus counteract pollution and unstable molecules. This all leads to longevity by slowing the aging process! Antioxidants also help decrease cholesterol and fat accumulation (gotta love em’)! Cacao, which is the raw form of chocolate, is also well-known mood enhancer.
  • Matcha is highly beneficial ground up green tea leaves. It contains L-theanine, which is known to aid in cancer treatments by helping fight tumours. At the same time as being energizing, it calms the mind and relaxes the body. Plus, it’s rich in vitamins, fibre and chlorophyll.
  • Dates are mother nature’s candy (thanks Ma!). Since they’re incredibly high in minerals and vitamins, plus packed with fibre, they’re the best option for sweetening anything that needs some sweetness.

These bliss balls are perfect to take on your next adventure, your next travel day, or even just to the office to curb that 4 o'clock dip of energy. They're packed to the nines with antioxidants and whole food energy.

Ingredients
  • 8-10 medjool dates (depending on size)
  • 1 cup Jules Fuel overnight buckwheat oats (matcha date, or blueberry cacao)
Instructions
  1. Put all ingredients into your food processor.
  2. Blend for about a minute, or until the mixture resembles a crumbly granola. You should be able to pick some up, squish it, and it will stay together.
  3. Roll into 1-inch balls.
  4. Store in freezer or fridge.
  5. Take them with you for your next adventure, a long day at the office, or travel day!

Creamy Lemony Nooch Dressing | Oil-Free & 4 Ingredients

You’d have a tough time trying to find a day to look in my fridge without seeing a jar of this Lemony Nooch dressing.

I’m telling you now… triple or quadruple this recipe so you can have this amazingness available in your fridge for up to 10 days, and finally get excited to make friends with salad er’yday.

This dressing works with any kind of salad. Greens, beans, grains, legumes, you name it, just add it, and it’s all better.

The best way to use this is to mash your torn up kale leaves in the dressing, and let it sit for 10 minutes in your salad bowl (this softens the kale), then add the rest of your salad ingredients and toss it all up! I try to get a salad in my system on the daily, and this dressing makes it easier than ever!

The nooch, paired with the dijon creates a cheeziness and creaminess without the need for any oil!

If you’re looking for more oil-free salad dressings, here’s a few to play around with.

Feel free to use apple cider vinegar to instead of lemon, and add a bit more maple syrup if you like it sweeter!

Benefits:

  • Nooch (Nutritional yeast) is packed with vitamin B12 (which everyone needs to make sure they get in their diet either by supplementing or eating B12 fortified foods like nooch’ or fortified plant-based milks), and has a cheesy flavour! It’s so delicious to sprinkle on anything, and add to any sauce to get that creamy, cheesy taste.
  • Lemon is detoxifying, great for your skin, high in Vitamin C and helps indigestion.
  • Oil-free dressing means you’re salad will be mega healthy! Oil is a refined fat, without fibre and with minimal nutrients. So if you’re trying to keep your salads low in empty calories, yet nutrient-dense and delicious, try ditching the oil and using these ingredients to create the creamy dressing you’re after!

An oil-free, yet creamy dressing that will make any salad a winner. This is my go-to! Triple the recipe so you have it on hand for easy salad making anytime.

Ingredients
  • 3 tbsp lemon juice (or apple cider vinegar)
  • ⅓ cup nutritional yeast
  • 1 tbsp dijon mustard
  • 1 tbsp maple syrup
  • 1-2 tbsp water, optional (depends on how thick or thin you like it!
  • * I recommend tripling this recipe and keeping a jar of dressing in the fridge ready to go*
Instructions
  1. Pour all ingredients (except for the optional water) in a mason jar and shake! Or, pour all ingredients into the bottom of your salad bowl, and whisk!
  2. Add a bit of that water if you want a thinner dressing.
  3. *I recommend adding some kale to the dressing in your bowl, and mashing it in the dressing with your salad tongs, then letting that sit a few minutes before adding the rest of your ingredients. This provides a delicious massaged kale base for the rest of your salad. My usual salad for 2 consists of 4 leaves of the massaged kale, tomato, ½ avocado, 1 pear, 2 green onions, 1 head romaine, 1-2 tbsp raisins and sunflower seeds.

Raw Carrot Cake Bliss Balls + Cashew Frosting

When carrot cake and healthy bites collide. These raw carrot cake bliss balls are good for… everything in life.

Desserting, snacking, tea timing, adventuring, lunching, or breakfasting.

They really could be your 24 carrot gold ticket for any of these life happenings.

They’re vegan, and easily made gluten-free, with zero refined sugar.

If you run into me in the mountains on a ski tour, bike adventure, hiking mission, or paddle board camping trip, and raid my backpack, you will find some kind of balls in there like these ones, or these coconut hemp ones, or these nut-free maca ones…

They’re the perfect on the go snack, and are ridiculously easy to make.

You could keep it simple and leave the bliss balls naked without the cashew frosting (which would take the cashew soaking time out of the equation), but…

If you want to take it to the next level… MAKE THE CASHEW CREAM CHEEZE.

The taste is on par with your fave carrot cake, but the health factor is untouchable.

So, if you’re into carrot cake, you’re going to dig these balls (it’s official, I’ve said ‘balls’ too much).

Benefits:

  • Carrots. Need I say more? Carrots are a super food. They’re packed with Vitmain A in the form of beta-carotene to make your eyes into warriors. They’ll boost your immunity too because of the antiseptic and antibacterial abilities they have, along with the Vitamin C they’re packing. Of course, they’re high in fibre, yet low in calories which will help reduce cholesterol, heart disease, and aid in your digestion.
  • Dates are nature’s candy! They’re packed with vitamins, minerals, fibre and if you get the juiciest ones you can find, they’re the tastiest things you’ll ever eat. The minerals like selenium, manganese, copper, and magnesium all help prevent osteoporosis. They’re high in iron to prevent anemia, and they’re packed with fibre to help with constipation. Yes.
  • Oats are high in fibre, minerals, and vitamins, too! See a theme here? Whole foods are where it’s at. Oats also have 2 antioxidants that are almost solely found in oats (avenanthramides and ferulic acid), which both help reduce blood pressure by increasing the production of nitric oxide levels to help dilate blood vessels.


Raw Carrot Cake Bliss Balls + Cashew Frosting

These bliss balls are perfect for taking with you on adventures, eating for breakfast or having for a guilt-free dessert!

Serves: 22 balls
Ingredients
  • 3 carrots (about 6 inches long)
  • 9-10 large medjool dates
  • 2 cups oats (gluten-free if needed)
  • 1 tbsp cinnamon
  • ⅛ tsp nutmeg
  • ⅛ tsp ginger
  • ¼ cup walnuts
  • ⅛ tsp salt

  • Cashew Cream Cheeze Frosting (optional but SO GOOD):
  • 1 cup cashews, soaked at least 2 hours (the longer the creamier)
  • ½ cup plant-based milk (I used this hemp milk recipe)
  • ½ tsp vanilla extract
  • 2 tbsp maple syrup
Instructions
  1. Blend carrots in your food processor until a fine meal forms.
  2. Set the carrot aside into a bowl.
  3. Add the rest of the ingredients to the food processor and blend until evenly blended together, then add the carrots back in, and blend until a sticky ball forms (or close to it).
  4. Roll into 1 inch balls with slightly wet hands.
  5. Place in the freezer for 20 minutes.
  6. You can be done! Or.... keep going to make a frosting covered bite, mmmm!
  7. Make the frosting! Blend all frosting ingredients together in a blender until smooth and creamy.
  8. Dip your bliss balls in the frosting, and place back in the freezer for storage.
  9. These keep well in the freezer, and travel nicely in a to-go bag!

✔️ 1 tsp maple syrup
✔️ ¼ cup pickle juice

🍽 Tamari Maple Dijon Baked Tofu

✔️ 1 block firm tofu, pressed & cubed
✔️ ¼ cup Dijon mustard
✔️ 1 tbsp maple syrup
✔️ ¼ cup tamari
✔️ 1 tsp garlic powder
✔️ 1 tbsp cornstarch (for crispier cubes)

👉 Whisk Dijon, maple syrup, tamari & garlic. Toss tofu in the sauce (marinate if you have time, or coat quickly if not). Sprinkle in cornstarch and toss again. Spread on a lined baking sheet and bake at 375°F (190°C) for 20 minutes, flipping halfway, until golden.

15 Minute Protein-Packed Vegan Pesto ChickUn Fettu 15 Minute Protein-Packed Vegan Pesto ChickUn Fettuccine 

1) Soak soy curls in water for 10 mins, then strain and pan-fry in olive oil & @bragg liquid aminos
2) In a pan, sauté 1 onion, lots of crushed garlic, 8-10 sliced mushrooms 
3) Add vegan pesto (used @love.legrand), nutritional yeast, and the pan fried soy curls to that pan. 
4) Boil pasta of choice (drop your fave pasta below… macaroni? Penne? Fettuccini?
5) Strain then pour pasta into the pan of goodness & mixy mixy
*** optional: add mushroom benefits with 1 tbsp each of @staywyldorganics Immunity Blend powder, and extra protein with @complement unflavoured protein powder. Use ‘hookedonplants’ for a discount - links in bio.
