Orange Pecan Chocolate Mushroom Vegan Fudge

The other day I was flippin’ through my fave mag (Veg News) and luckily came across a drool-effect vegan fudge recipe by Jackie Sobon (Vegan Yack Attack). I say ‘luckily’ because… now you get to bask in the introduction to this decadent, melt-in-your-mouth fudge. I switched it up a bit to create what is seen here: Orange Pecan Chocolate Mushroom Vegan Fudge. It’s a mouthful…of AMAZINGNESS!!!

You can even benefit from eating this delicious dessert-y concoction.

I amped up her fudge recipe by adding in some Stay Wyld Organics medicinal mushroom goodness, and even a scoop of the simplest, cleanest Complement Protein powder.

The protein powder is a fave around here. 4 ingredients, and each one is stated on the front of the biodegradable bag in percentages.

And medicinal mushrooms? Well, they’re adaptogens, and they help bring your body back to homeostasis (in other words, balance everything out and help you deal with daily stressors).

Plus, they’re PACKED to the nines with antioxidants. Chaga especially is an antioxidant powerhouse.

Think of adaptogens as as a calming Grandmother, who brings you back down to earth when craziness hits the fan. If your adrenals are wired, they’ll help slow them down. If you’re immune system is out of wack, they’ll strengthen it up. If your mood swings are as steep as the Eiffel Tower, they’ll do their best to calm them back down to the flat-ness of the Saskatchewan plains kind of level.

Reishi, Lion’s Mane, Cordyceps, Turkey Tail and Chaga… each of them have their special unique beneficial traits. Whether you want more focus, more energy, less anxiety or more immunity, they’ve got you. Today we’re adding Cordyceps to the mix to make this fudge super energizing.

Not only does this fudge bring on plant protien and mushroom benefits… but it also shines for what it doesn’t have.

No dairy: No cream. No butter. No milk.

Yet, it’s still incredibly decadent, creamy, fudge-y and mouth-wateringly heavenly.

A vegan, melt-in-your-mouth fudge with adaptogenic medicinal mushrooms! An energizing and delicious gift for the holidays, to your loved ones... or yourself!!

Ingredients
  • 4 cups vegan dark chocolate chips
  • ¼ cup vegan butter
  • 1 cup full fat coconut milk (the solid taken from the coconut milk can)
  • ⅓ cup maple syrup
  • 1 teaspoon orange extract (peppermint would be great too!)
  • 2-4 tsp Stay Wyld Cordyceps powder (use code 'hookedonplants'
  • ¾ cup dried cranberries (save ¼ for the topping)
  • ¾ cup pecans, chopped (save ¼ for the topping)
  • 2 tbsp orange zest (half for the topping)
  • 1 tsp sea salt
Instructions
  1. Lightly greese an 8 x 8 baking dish with butter or coconut oil.
  2. Fill medium sized pot with 2-3 inches of water, and warm it up over medium heat.
  3. Create a double boiler by placing a steel or glass bowl over the pot.
  4. Add chocolate chips, coconut milk, maple syrup, vegan butter and orange extract.
  5. Whisk occasionally until smooth (about 5-8 minutes)
  6. Add the mushroom powder, whisk until smooth.
  7. Remove the bowl from the heat and fold in ½ cup cranberries, ½ cup pecans, 1 tbsp orange zest.
  8. Pour fudge mixture into the prepared baking dish (spread evenly)
  9. Sprinkle the toppings on there (1/24 cup each of cranberries and pecans, 1 tbsp orange zest, sea salt)
  10. Place in the fridge for 1 hour before serving.
  11. Chop it up and enjoy (place chunks in mason jars for an amazing Christmas present)

The Dessert Queen’s Basic Veganized Peach Galette | Mom’s Specialty

My Mom is the dessert queen. Always has been and always will be. The only difference over the last few years is that the desserts she’s always made…the ones that have earned her the title…are now veganized. I’m talking about the dense chocolate flourless Sachertorte Cake (best birthday cake), her amazing fruit crisps, her Tarte Tatin (insanely delicious), and now this, the Peach Galette (the best way to put these seasonal peaches to use).

Thanks to Mom for veganizing old faves.

She’s been plant-based now for about 3 years. Ever since reading The China Study, and Eat to Live, she was hooked on the disease prevention, energy boosting and longevity aspects of veganism. Then she watched all the documentaries around…. Cowspiracy and Forks Over Knives, and dove into Dr. Gregor’s Nutrition Facts.org… Her main reason is the desire to live a long, healthy life as the athlete and energizer bunny she is, so we can continue to bike, ski, and now kite board (we’re both learning!) together. I’m so grateful that she and my step Dad are on the plant train.

Ok, moving on with this dessert.

First of all, I want you to know that you can easily veganize any of your fave baking.

The Dessert Queen’s Basic Veganized Peach Galette | Mom’s Specialty

Ingredients

  • Pastry:
  • 2 cups of whole wheat or white flour

  • 1 tablespoon of cane sugar

  • ½ pound ‘butter’ (use Earth Balance or Culcherd squares for baking)

  • 1/3 cup of cold water

  • Filling:
  • 5-7 peaches (or gala apples)

  • 1/4 cup coconut or cane sugar

  • 1 tbsp cinnamon

Directions

  • Make pastry: Mix the flour and sugar in your food processor with the paddle attachment. Turn off food processor and quickly cut in pieces of cold butter (1/2 tablespoon chunks). Then, turn the food processor back on and mix until butter breaks up into pea sized pieces. Add cold water and mix until it forms a ball. Flatten the dough into a disk shape, wrap with saran wrap (re-usable saran wrap if you have it!) and chill pastry overnight or at least for a few hours.
  • Cut the peaches or apples in wedges. If using apples place wedges in a big bowl and toss with sugar  (approx. 1/4 cup) and cinnamon. For the peaches, lay them down on the pastry, then sprinkle the sugar and cinnamon on them.
  • Preheat oven to 400 F
  • Roll out the pastry on floured surface into a large circle 16-18 inches across. Fold in half and then in quarters so you can move it to a parchment-lined baking sheet. Unfold so the pastry drapes over the baking sheet.
  • Place fruit in spiralled circles on the pastry leaving 4-5 inches of the pastry sticking out beyond the fruit so that you can fold the pastry over the fruit after you have laid all of the fruit down (there should be 2-3 layers of fruit).
  • Before placing in the oven, brush the pastry with water and sprinkle with sugar for a crispy and nicely browned crust.
  • Bake at 400F for 30 – 40 minutes. Take a look and rotate at 30 minutes and bake 5 -10 minutes longer if needed.
  • Serve warm with your favourite vanilla non-dairy ice cream or coconut whipped cream!

Notes

  • Prep time doesn’t include the chill time for the pastry (2 hours or overnight)

Easy, pop-in-your-mouth, delicious and delightful lil’ morsels! These chocolate blueberry clusters are mind-bogglingly drool-worthy and refreshing.

These clusters just happen to be PACKED with antioxidants too (hello blueberries and chocolate), and by the way vegan chocolate means no dairy, no problem.

Ingredients

  • 1 cup vegan chocolate chips

  • 1 1/2 cups of blueberries

Directions

  • Cover a plate with parchment paper and set aside
  • Melt chocolate chips in a double boiler (place water in the bottom a medium sized pot and find a pot or glass or stainless steel bowl to sit on top. Make sure the water underneath is 1/2 inch below the upper bowl or pot. Place the chocolate chips in the top pot or bowl, and then heat the water to a low heat. Stir the chocolate constantly until it is melted. The water in the bottom of the double boiler should not come to boiling while the chocolate is melting). Or microwave (on high for 1 minute, then take out and whisk vigorously… if it’s not completely melted, microwave another 10 seconds and take out to whisk… don’t over heat!)
  • Add the blueberries to the chocolate, and stir until fully coated
  • With a spoon, scoop out the chocolate covered blueberries (about 8 per spoon-full), and place in a cluster on your parchment-covered plate
  • Leave these in the fridge for at least 30 minutes to harden
  • Store them in the fridge or freezer in a tupparware

Raw Chewy Hemp Date 2-Bite Brownies | Vegan Adventure Snack

The ridiculously easy and supremely mouth watering answer to your snack attack. Take these date 2-bite brownies on every adventure or camping trip you go on this summer. Make a big batch because they go quick.

Dates are the perfect thing to bring on your hiking mission. They’re packed with minerals, vitamins, energy and fiber. They taste amazing. They’re crazy versitile. They pack into your adventure bag like no thang.

I’m a fan of packing straight up dates for mountain bike missions, camping weekends, or even travel days. But, adding extra goodness to the dates and blending it all together… that’s next level, and not too much effort either.

You could totally make these into balls, but sometimes it’s nice to be lazy by just pressing them down into a pan and making the knife do the hard work.

Raw Chewy Hemp Date 2-Bite Brownies | Vegan Adventure Snack

Ingredients

  • 20-25 medjool dates, pits removed

  • 1/4 cup tahini

  • 1/4 cup hemp seeds

  • 1 tsp vanilla

  • 1 tbsp cacao powder

  • pinch of salt

Directions

  • Add all ingredients to your food processor and pulse then blend until everything is incorporated and sticks together between your fingers (may need to scrape down a bit… my food processor has a scrape as you go scraper)
  • Press the mixture into a parchment covered pan (around 7 by 7 inches), and slice into squares.
  • Store in the freezer and eat from there! Or take them up the mountain or on your next road trip or camping adventure.

Ginger Coconut Kombucha Float

Time to float on!  Kombucha float style!

Today we’re getting our float on… the easiest way ever.

2 ingredients (3 if you count the berries on top), a satisfying pour, and a super delicious spoonful of bubbles n’ cream!

Just like you might remember, but minus the pop n’ dairy.

Have at er’ kids!

Simple as:

  1. Scoop
  2. Pour
  3. Spoon

Today we’re using the Ginger Kombucha by Rise!! Their Rose Shizandra or Maple Blueberry boosh’s would be a great idea too.

I do make my own boosh, but it’s not always ready to go, and… I really like this kind. You can find Rise in most grocery stores these days, and this ginger one goes deliciously with the vanilla coconut ice cream (by Coconut Bliss).

Que the nostalgia, cuz here’s a taste of childhood in the summer!!

  • 2 cups of kombucha (used Ginger Rise Kombucha)
  • 6-8 scoops of vegan ice cream (used Vanilla Coconut Bliss)
  • Blueberries to top.
Instructions
  1. Scoop your ice cream into your 2 cups.
  2. Pour the boosh all over.
  3. Sprinkle those blueberries on top!

Dinner tonight? Tofu Poke Bowl 🎉👌 🌱 🌱Base: Brown Dinner tonight? Tofu Poke Bowl 🎉👌 🌱

🌱Base: Brown Rice (added artichokes, butter beans, green peas, tamari or @bragg aminos at the end).

🌱 Tofu Poke: (firm, chopped) tossed in tamari, maple syrup, Dijon, smoked paprika. Then tossed again in corn starch. Baked for 20 mins at 400 flipped half way. 

🌱Salad: dressing is pickle juice, Dijon, nooch, a little maple syrup.

🌱Toppers: capers, nori sheets, sesame seeds, avo, sauerkraut, sprouts.

🌱 Sauce: butter beans, cannellini beans, miso paste, nooch, pickle juice. Blend!!

Save this one for your next lazy-but-feels-fancy dinner night 🙌

Pro tip: cook big batches so you have rice / dressings/sauces in the fridge for your next creative whip it together kinda night 👩‍🍳
