5 Vegan Easter Treats that will Blow Away Your Bunny Ears

April 9, 2020 By julia

Easter was a huge deal when I was a kidlet.

Painted Easter Eggs, a string to follow that would lead me to the hidden chocolates under the couch and behind pillows, then a big kids Easter Egg hunt all over the forest with one mega, sought after chocolate bunny prize.

Why that doesn’t happen on Easter day anymore as a young at heart adult? I DON’T KNOW. Bring it back, please. When did we all grow up and think we’ve outgrown easter egg hunting? We’re all kids at heart, and that kinda stuff should continue on whether it’s for the new generation of kids, or just for yourself. Because you deserve to be a kid always, and forever.

Anyways… I thought I’d bring some Vegan Easter Treats to you that will complete your weekend  from some of my favourite veganista blogerellas. Hopefully this brings some nostalgia back to your Easter, or at least amps it up with a bit more deliciousness.

Easy Vegan Cashew Cheese Sauce | 7 Ingredients

March 29, 2018 By julia

The good ol’ days of broccoli and cheese sauce are making a comeback, this time in the form of this next-level raw vegan cashew cheese sauce.

Totally nostalgic…who’s with me on that?

In the attempt to get me to eat those veggies in any way possible… cheese sauce, and sometimes mayo, made it onto the plate beside those greens.

It worked like a dream, just like this new & improved eat-yo-veggies cashew cheese hack will.

Something special happens to broccoli when it’s paired with a creamy, tangy, cheesy sauce. Dip away with all the other veggies, and you’re easily munching away on greens like their goin’ outta style.

All you need to do for this recipe is soak the cashews, blend it all up, and then drizzle, spread, dip, scoop…

I’m all about the sauce.

If you’re looking for a veggie-based cheese sauce option, check out this Mind-Blowing Nut-Free cheese sauce recipe I posted not too long ago.

Either one is perfect for a colourful side dish for a holiday like……. Easter!

Benefits:

  • Cashews are packed with healthy fats (monounsaturated and polyunsaturated) to help the absorption of the fat soluble vitamins (A, D, E, and vitamin K) found in the nutrient-dense greens. Plus, these healthy fats help brain development and memory!
  • Nutritional Yeast (NOOCH) is a vegan’s best friend. Not only does it taste cheesy, but it also is packed with Vitamin B12 (which comes from microorganisms in soil), the one nutrient that you might be lacking in on a vegan diet.
  • Turmeric is a magical ingredient. Not only does it change any recipe into a smashingly colourful dish, but it’s also one of the most powerful anti-inflammatory ingredients out there. Add a bit of pepper to increase the bioavailability of the curcumin in the turmeric by 2000%!

Tip time:
The secret to sticking with plants only?
Knowing your WHY.
This is mine.

I went plant-based a decade ago after multiple knee surgeries to calm inflammation, and stayed for the animals and the planet. As a former Olympian, holistic nutritionist and plant-based chef, my goal is simple: meals that fuel you, (each calorie counts towards making sure you’re thriving in this life), must taste amazing and don’t take all night.

This one is creamy, savoury, crispy, and packed with protein.

💡 LIFE HACK:
I always double or triple my recipes so I have leftovers for throw together dinners or lunches later in the week (think wraps, bowls, mega salads). So when I say 2 yams, I’m actually roasting 4 to 6! Future you will thank present you.

R E C I P E 👩‍🍳

🌱 2 cups soy curls

🌱 2 heads romaine
🌱 1/2 Red onion, thinly sliced
🌱 Capers
🌱 1 avocado

Caesar Dressing
🌱 1 can cannellini beans, liquid poured out
🌱 1 tbsp miso paste
🌱 2 tbsp nutritional yeast
🌱 1 clove garlic
🌱 1/4 cup pickle juice
🌱 Salt and pepper

DIRECTIONS

1. Heat oven to 400°F. Slice the onion in half and trim off the tip. Poke the yams and trim the ends.
2. Place on a lined baking sheet and bake 45 minutes, flipping the yams halfway.
3. Soak soy curls in water for 10 minutes, then strain.
4. Fry in a teeeeny bit of oil with a splash of Bragg’s for about 4 minutes, stirring so they brown on all sides. A couple batches.
5. Blend all dressing ingredients until smooth.
6. Toss romaine with the dressing, then add red onion, capers and avocado.
7. Plate the salad, top with yam rounds, peel the caramelized onion into the centre, and finish with the soy curl chicken.

Save this for your next ‘omg I’m stressed and don’t know what to make for dinner’ kinda night 💚
