Hooked On People Interview with The Raw Advantage + Simple Banana Pudding

Time to meet Chris Kendall AKA ‘The Raw Advantage’. He’s a raw foodist who is all about spreading the message of positivity, living foods, and high energy vibes. He does this through his youtube channel, his Costa Rica Retreats, his e-books, and his speaking engagements. His excitement for the raw food lifestyle is contagious, even through social media. After going through a period in his life with poor lifestyle choices and bad injury recoveries, he decided to make a change. At 18 he started making major lifestyle changes and by 23, he switched to the raw food lifestyle and never looked back.

I have so many questions to ask Chris because he’s such an inspiration when it comes to the raw food lifestyle!

But, I will try to keep it simple today and for those who want to know more they can find him on Youtube, Instagram, his website, or just join him at a Costa Rica Retreat !

Hooked On Plants (HOP): At 18 you came to the conclusion that you needed to change your lifestyle. What was the catalyst for this change?

Chris Kendall (CK): Really, the catalyst was being burnt out, depressed, and having a harder time physically in terms of recovery and energy, to skateboard. The first thing I found was yoga, which helped immensely and pointed me in the direction of healthy, compassionate living.

HOP: How long did it take for you to see the benefits of the raw food lifestyle?

CK: Over a period of 5 years I vastly increased the amount of raw food in my diet, starting with a fruit breakfast and going from there. At 23 I jumped into an all raw food diet and experienced the biggest leaps and bounds in my health, vitality, mood, spiritual connection, endurance and passion. These changes happened virtually over night for most, and within the first week for the rest.

HOP: What were the main changes you saw in yourself, and ones that people could expect to see in themselves if they decide to focus on raw foods?

CK: In those first 24 hours my heart centre literally blew open. I felt such a deep connection to the spark within and recognized it in everyone and everything around me, this was more than profound. I felt a deeper connection to my purpose and gained a clarity in my life path that I hadn’t experienced. My joy and lust for life increased and I simply felt bouncier and more prone to move and enjoy myself. Each person’s time line of experiences and shifts is different and fully dependant on their previous lifestyle and particulars. I had been steadily improving my diet and had fasted numerous times before going raw, so when I did it was like rocket fuel.

HOP: I’ve yet to go to the Woodstock Fruit Festival, but this raw food festival looks like a blast! How many times have you been? Will you be prepping the raw-food for all of the attendees this year?

CK: I love love love the Woodstock Fruit Festival, it’s such a great time with so much opportunity for connection, education, fitness, great food and more! I have been a part of every single one (flowing as chef / speaker / yoga teacher) since its conception in 2011. This summer will be their 8th festival including the one in Hawaii. Together with Naturally Ashley we will be making 3 sauces / dressings per night to accompany the daily salad bar 🙂

HOP: You met Dr. Douglas Graham at a Vegan festival in 2004, and went 100% raw overnight! What did he say to you that inspired you to do so?

CK: I first met Dr Graham at “A Taste of Health” Vegan festival in Vancouver B.C. It was as much of what he said as what I picked up from him. I went to 2 of his 3 lectures on the first day, one recipe-based and one nutritional-based. The science driven but common sensed style of his approach really hit home, and it felt like the last piece of a puzzle that I had been looking for finally fit. Beyond that he was literally glowing, in my past I ate lots of magic mushrooms and would sit in nature, at times able to see aura’s around trees and people, seeing Doug glow when I was straight and sober really left me feeling like he had something to offer.

HOP: Dr. Graham’s 80/10/10 lifestyle is one that so many people are thriving on. Even professional athletes, like the ones below, have been seeing amazing results in recovery and performance:

  • Mac Danzig: UFC Fighter
  • Michael Arnstein: The Fruitarian (ultra-marathoner)
  • Tim Van Orden: Running Raw  (5 or 6 time runner of the year!)
  • Mike Vlasity: Fruit and Strength (raw weightlifter)

Many aren’t familiar with the 80/10/10 lifestyle, which is 80% carbohydrates, 10% fat, 10% protein, mainly coming from raw fruits and vegetables. Can you enlighten everyone on the benefits you’ve seen with this lifestyle?

CK: Absolutely, plus I’d like to point out these numbers are guidelines over the week month and year and not set hard rules for every meal or even day. Generally stating for optimal health, it is good to aim to get 80% or more of total calories from carbs and 10% or less from protein and fat.

  • I’ve personally become a lot clearer in my head and heart, and found renewed passion for living and growing with my purpose in loving service.
  • I have found it incredibly easy to maintain muscle mass, put some on if I want and stay at a low body fat percentage.
  • Feeling lighter, bouncier and more energetic I am able to go faster, push harder and recover faster than ever before.
  • I love that I don’t smell like I used to, in the bathroom or after working out.
  • My skin tone and appearance has improved and I have been told countless times I look much younger than my age.
  • Clean up time in the kitchen is so much easier and I have found such a joy in creating raw food meals and dishes.
  • Fruit and fruit hunting has become a real joy in my life, as has traveling to exotic places and enjoying time with other fruit hunters.
  • The biggest benefit by far though has been seeing the ripple effect around me as more friends family and acquaintances improving their diet and being more conscious of their spirit and power.

HOP: There have been countless people that have improved their digestive, adrenal, thyroid, and overall health with a raw food lifestyle. Not to mention those who have reversed diabetes, heart disease, obesity and cancer by eating raw foods. Who are your favourite, inspirational examples for this?

CK:

  • John Kohler is amazing and reversed major issues with raw food
  • Megan Sherow reversed stage 3 brain cancer within months
  • Janette Murray-Wakelin reversed cancer in her 70’s and went on to set a world record for consecutive marathons (366 in a row every day)

HOP: I find myself eating mostly raw foods, especially throughout the daylight hours. Most people see the raw food lifestyle as extreme. Can you give 3-5 ways to make eating this way easier, more convenient and seem ‘normal’;)?

CK: 

  1. Think about the fact that all animals eat the foods they are designed to eat one food at a time, in its whole, raw, natural state until they’re full. They don’t worry about nutrition, they simply eat what they are designed for. We, like our closest living relative the Bonobos, are designed to eat fruits and tender greens
  2. Start with breakfast, fruit is best eaten on a completely empty stomach, so breakfast is the easiest way to do it. Make a big smoothie, fruit salad or green smoothie and enjoy all you care for then a few bites more. With raw, low-fat, fruit based meals, its really tough to over eat, so it’s better to err on a little more rather than a little less
  3. Read raw recipe books to get inspiration for new recipes, then once you find 4-6 recipes you love, the lifestyle gets so much easier
  4. Look for inspiration in Youtube videos, books and by connection with coaches / other raw foodists to share experiences, ask questions and make the transition easier. In my coaching practice I often find 1 hour can make the difference between years and, in some cases, decades of struggle as opposed to streamlined growth and ease. I offer coaching by donation 🙂
  5. Realize that this is all as big of a deal as you make it. For example, I know it is a big deal health-wise, environmentally, and for the animals, but also know I do not need bring that up all the time or judge others for their choices. Being calm confident and happy while simply being the example leads to more people being curious and receptive than any lecture.

HOP: What is your favourite music right now? Who’s your favourite band?

CK: I love most forms of music although wouldn’t consider myself a music person, it’s rare I pick up a new band or search for new music, in fact I am not a avid concert goer either. I like the classics like Bob Marley, Neil Young, The Doors, and newer stuff like Fantan Mojah. Lots of old school hip hop and some new too, but mostly rock and reggae!

HOP: When is your next retreat and how many are you doing this upcoming year?

CK: My next set retreat is March 3rd – 10th, 2018 at The Farm of Life in Costa Rica. It will be another Raw Food n Yoga Surf Adventure retreat, everything but the raw food is optional hahaha:) I plan to do 1 this year, and if it fills up quick I may do another.

HOP: What’s you’re next big project you’re working on to spread the Peace, Love and Seasonal Fruit message?

CK: I always have things on the go. I have a few new books coming out, new shirts, and a huge update on my free raw recipes app for iPhone. I’m always looking at ways to grow the TRA Dream, a charity I created to actualize donation-based healing and educational raw food permaculture and yoga centres / communities around the world.

HOP: What is your favourite spring (or maybe camping) raw food recipe?

CK: I would have to say simple banana pudding as you do not need any tools other than a bowl and your hands.

Raw Advantage’s Simple Banana Pudding

Time: 10 minutes

Serves: 2-4 people

Ingredients:

  • 12 bananas
  • 3/4 cup raisins
  • 1 tsp cinnamon
  • 1 stalk celery, minced (optional)

Directions:

  1. Peel 10 – 11 bananas and place them in a bowl
  2. Mash bananas well using your hands, a fork or a potato masher.
  3. Add the raisins, cinnamon and optional celery, mix and enjoy!

Optional additions: carob powder, dried mulberries, date bits

Strawberry Cacao ‘Cheeze’ Cake | Raw & Vegan

Devouring a dense piece of chocolaty cheese cake doesn’t have to be a complete guilt ridden experience.

If you’re new to this vegan thing, or just want an alternative to the typical heavy duty New York style cheese cake, this has got to be the best way to get your fix.


Simple, raw decadence made up of nutrient-dense whole food ingredients.

I say, WHAT!?  Yes, Please.

Not only that, but even your traditional egg and milk baking grandmother would be impressed.

This pie is perfect for a birthday shindig, or why not the upcoming day for Dad? Father’s Day is just around the corner…

I put it to the test, and the guys in my family go gaga over this one, so I know the ones in yours will devour it too.

All you need to do is blend the crust…

…press it…

…blend the filling…

…then spread it…

Don’t forget to dip some apple slices in there for the clean up crew…

…blend the strawberries… pour it…

and freeze it!

Benefits:

-Cacao is the raw form of chocolate that offers an abundance of cancer-fighting antioxidants. Plus it’s known as a endorphin booster. There’s a reason why we go to chocolate when we’re stressed out. But, make it the pure form of chocolate and you’ll be better off and feeling fine.

-Strawberries are packed with phytonutrients, antioxidants and tons of vitamin C! 

 

Strawberry Cacao ‘Cheeze’ Cake | Raw & Vegan

Serves: 8-10 people

Time: 4 hours soaking time, 15 minutes prep, 1 hour chill time

Ingredients:

Crust:

  • 1 cup oats (gluten free if needed)
  • 1/2 cup almonds
  • 1 cup pitted dates (if they are very dry, soak 10 minutes then strained)
  • 1/2 cup shredded coconut

Filling:

  • 2 cups cashews (soaked minimum 4 hours, then strained)
  • 1 banana
  • 2 tbsp coconut oil (if solid, melt first into liquid)
  • 1/3 cup maple syrup
  • 1/4 cup cacao powder
  • 1 tsp vanilla

Strawberry Sauce:

  • 1 cup frozen strawberries, thawed

Optional Topper:

  • Fresh strawberries, sliced

Directions:

  1. Make Crust: in food processor, blend oats, almonds and coconut together until meal consistency, Add in dates and blend until cookie dough like consistency.
  2. Press crust into spring form pan (7-9 inch diameter) into an even layer
  3. Make Filling: blend all filling ingredients together in food processor
  4. Pour filling into spring form pan and spread out evenly with spatula
  5. Make Strawberry Sauce: blend strawberries with the thawed liquid in your blender
  6. Pour the strawberry sauce evenly over the chocolate filling
  7. Chill in the freezer for at least 1 hour
  8. Take out of the freezer about 30 minutes before serving, so you can cut through the strawberry layer. Serve with fresh strawberries and/or coconut whipped cream used in the Tarte Tatin recipe!

Hooked On People: Café by Tao + Raw Lemon Blueberry Cake

Agathe Mathieu is the chef and owner of the North Vancouver raw, vegan and organic Café by Tao. Just stepping into this café and you are overcome with a feeling of health and well-being. Next time you’re in North Van, definitely give yourself a bit of extra time to pop by their beautiful, new location overlooking Lonsdale Quay. Agathe is raw vegan, she has studied raw food at Living Light Culinary Institute, and has owned Café by Tao for 5 years now.

What made you adopt a raw vegan lifestyle?

A friend lent me 12 Steps to Raw by Victoria Boutenko and I began eating raw the next day.  I have now been eating 100% raw since August 2003!

What differences have you seen in yourself since going vegan? 

·         after only three months on a raw vegan diet, rheumatoid arthritis disappeared

·         extra weight melted away

·         floaters in my vision vanished

·         my rosacea subsided

·         my energy level soared and I still have a lot of energy today!

 

How did Café by Tao start!?

I started first with selling some items wholesale: kale chips, vegan cheesecakes, veggie burger patties, falafel patties, crackers, etc. One thing lead to another, and in March 2012, I opened Café by Tao.

 

You’ve moved to a beautiful new location in North Van! This must mean Tao is doing well 🙂 Have you noticed people becoming more curious about the vegan lifestyle and the foods you create?

 I have definitely seen more interest in the vegan or plant-based lifestyle now than when I first began eating this way. People are more open to trying new foods and there is more emphasis now on adding more plant-based foods to your diet.

 

How long have you been a raw vegan chef? 

 5 years officially with the opening of the café.  In 2007, I took a 3 week course at Living Light Institute.  Being a single mother of three, I came back and continued the learning in my kitchen.  My children were my teachers really telling me if a dish was fantastic or not ;o) Great critics!

 

What are the 3 (or 5) reasons you tell people to go vegan? 

For our health, for our environment, for the animals, to create a better future for our children and our planet.

 

What would you like people to know about Tao ? What is your mission?

   At Tao one discovers how delicious plant-based diet can be, how easy it is to prepare, feel younger and energized! Our mission at Tao is to provide a healthy option to our community and to encourage people to include more plant-based foods in their diet. Our vision is to teach “ Health and Business Training” to open ones’ own organic plant-based café restaurant in their community. How clever of Mother Earth to put the medicine in our food!

Now onto the food!

Agathe’s Raw Lemon Blueberry Coulis Cake:


This flavourful vegan cake is free of wheat, dairy and refined sugar. It’s also made with nutrient-dense ingredients that would make your mother proud. 
 
All you need is a food processor, a blender, and a 6” spring form pan. 
 

Ingredients:
Crust: 

  • 60 g pecans, soaked and dried 
  • 30 g raisins
  • 10 g dates

Lemon Filling: 

  • 45 g maple syrup 
  • 45 g of chopped dates 
  • 50 g lemon juice 
  • 45 g young coconut meat 
  • 140 g macadamia nuts, soaked 2 hours, rinsed 
  • 3 tbsp (45 g) coconut oil, melted 

Blueberry Coulis:

  • 125 g fresh blueberries (if frozen thaw them first) 
  • 60 g dates, chopped
     

Directions: 

  1. Make crust: In a a food processor, mix ingredients until they form a dense ball you can fit in the palm of your hand. Mold it with your fingers at the bottom of the spring form pan to form the crust
  2. Make lemon filling: Mix maple syrup, chopped dates, lemon juice and coconut meat in your blender until smooth. Before you empty out the blender, add the macadamia nuts and coconut oil and continue blending until smooth 
  3. Pour the lemon filling on top of the crust and refrigerate while you make the blueberry coulis. 
  4. Make blueberry coulis:  Mix dates and blueberries in your blender until creamy.
  5. Pour blueberry coulis on top of lemon filling and freeze for 6 hours, then move to the fridge. 
  6. Enjoy!

Cacao RawNola | Raw Vegan

Stop what you’re doing. Make this now. Thank me later.

Too demanding? It’s worth it.

This stuff should be illegal, it’s so good. Not to mention it’s simplicity. Raw food for dummies, people!

If you’re new to the raw food world, and this happens to be the first raw recipe you make, you’ll be hooked.

Move over cookie dough… there’s a new guy in town.

This time it’s healthy, and dare I say… tastier.

Sprinkle this on your thick and creamy smoothie bowl or banana ice cream… or you could even top your Jules Fuel with some of this sweetness!

Are mornings allowed to taste this good????

Yes. Yes they are.

This recipe is inspired by Loni Jane (thank you girl!)

Granolas these days… usually they’re packed with oil and refined sugars.

With this RawNola, the nutrients are still in tact without the disturbance of heat, plus there’s no refined sugar, it’s fat-free, vegan (of course), and SO EASY.

Benefits:

  • Dates are one of those ingredients… just too good to be true. They’re naturally sweet, gooey and delicious. Plus, they’re packed with fibre, minerals and vitamins. Yup, nutrient-dense powerhouses that you don’t have to feel guilty about eating, even though they taste so sinful! Want more? They’re packed with iron to help with anemia, they keep you regular, their amino acids help digestion, and their potassium reduces the risk of strokes.
  • Oats are fibre-rich to lower cholesterol and trigger to let your brain know you’re full. The manganese boost will help with anxiety. The antioxidants will combat cardiovascular disease. Oats will also help balance your blood sugar levels. Opt for the gluten-free version if you’re gluten-sensitive.
  • Coconut is packed with heart healthy omega medium-chain saturated fats are used by the body efficiently and transformed into energy. It’s also antibacterial and anti-inflammatory to decrease bacterial overgrowth, and inflammation in the body.

CACAO RAWNOLA 

Time: 5 minutes

Serves: 2

Ingredients:

  • 1/2 cup raw oats (gluten-free if needed)
  • 1/2 cup shredded coconut
  • 7-10 pitted dates
  • 1 tbsp cacao

Directions:

  1. Add oats, coconut, cacao and 3-4 dates to a food processor or high-speed blender, pulse until dates are evenly mixed
  2. Continue to add the dates until your desired texture is reached. You may need all of them, you may not… this depends on the gooeyness of your dates
  3. Top on your Banana Soft Serve or smoothie bowl, or Jules Fuel, or just pour some Vanilla Date Almond Milk over it in your favourite bowl and call it a day.

Veggies For Dayz Rice Paper Rolls with Tahini Lime Dip

Perfect for those days that you have that urge to dive into a plate-full of cleansing, vcggie deliciousness.

This dish is part of the Vancity Virtual Potluck menu!

The #VancityVirtualPotluck includes over 30 delish recipes from amazing Vancouver (/Whistler!) bloggers. The lovely ladies over at Piquant Marketing have brought us all together to form a mega-menu to devour.

I was super excited to start off the appetizer course of the Virtual Potluck, but then, just like a real-life potluck… I went ‘AH, what do I make’?

Then, ‘ahhhhhh yes rainbows are pretty. Let’s make some.’

For the appetizer that comes after these rice paper rolls, head over to Stephanie and Kiana at Karma and Soul for their amazing Roasted Balsamic Beet Hummus recipe (inspired by Melissa at Spread’Em Kitchen)!

Back to these crunchy, nutrient-dense rolls. So simple and SO fresh.

Raw.

Vegan.

Oil-Free.

Gluten-Free.

And this sauce is perfection.

You can create an endless combination of veggies and fruit to stuff into these wraps. Just pack in your favourite colours of the veggie rainbow.

(I get all my favourites from Spud – use CRVAN-MURJUB for 20 buckeroos off!)

These babies are perfect to bring as a colourful appetizer to any shindig you’re going to.

The dipping sauce is also used in the Cucumber Cups canapé recipe. It’s so versatile and can be used as a spread, dip or dressing depending on the amount of water you add.

There’s no doubt that this flavourful, oil-free sauce will become a sought after staple in your abode.

Benefits:

~ Raw produce of any kind are what makes your body thrive. Eating fruits and veggies in their raw form keeps the nutrients in tact, plus gives you the water content and fibre you need for the digestion and assimilation of the vitamins, minerals and nutrients. You’ll get mega-benefits from all the enzymes and phytonutrients in raw goodness. This leaves you with more energy for healing and life! Clearer skin, more energy, less sickness, easier weight-loss, better digestion, and less inflammation are all benefits of eating an abundance of raw fruits and veggies.

~ Tahini is one of the best sources of calcium you can consume. The calcium in sesame seeds (what tahini is made of) is easily absorbed and assimilated by your body to help create strong bones well into your 90s

~ Rice paper wrappers are gluten-free, low-calorie, low-fat and easy to use. They are a great option for creating wraps with because the only ingredients are rice, and water (maybe some salt)!

Veggies for Dayz Rice Paper Rolls with Tahini Lime Dip

Serves: 2-4

Time: 20 minutes

Ingredients:

Wraps:

  • 5-8 rice paper wrappers
  • 2 beets, grated
  • 4 carrots, grated
  • 2 mangos, sliced
  • 2 cucumbers, sliced length-wise
  • 1 avocado, sliced
  • 1 red pepper, sliced thinly
  • as many sunflower sprouts as you can fit
  • 1 cup water (for rice paper)

Tahini Lime Ginger Dip:

  • 2 tbsp tahini
  • 4 tbsp almond butter
  • 1 tbsp + 1 tsp tamari or soy sauce
  • 1 tbsp rice vinegar
  • Juice of 1 lime
  • 1 tbsp maple syrup
  • 1/2 tsp ginger powder
  • 1/2 cup water

Directions:

  1. Make dipping sauce: add all dip ingredients to mini food processor or blender. Blend until smooth
  2. Roll up the wraps: pour water in a plate. Submerge one rice paper in the water for 20 seconds. Take out and place on breadboard. Fill the wrap with some of each veggie. Fold the ends of the rice paper over the veggies, then roll like a burrito.
  3. Cut in half, and serve with dipping sauce.

3-Ingredient Banana Oat Blender Pancakes (Protein Packed) 🥞

Ingredients:

	•	2–3 ripe bananas
	•	2 cups oats
	•	1½–2 cups plant mylk (any kind works!)

Also… clean Vegan Protein (use code HookedonPlants for a discount). 

Not mandatory, but fluffy-fies those flapjacks:

	•	1 tsp baking powder
	•	1 tsp baking soda
	•	Pinch of salt

✨ Up-level it:

Add a scoop of Vanilla Protein + Greens from Complement and Immunity Blend Mushroom Powder from Stay Wyld (discount links in bio).

For extra flava-flave:

	•	1 tsp cinnamon
	•	1 tsp vanilla

Directions:
	1.	Blitz the oats into flour in a high-speed blender.

	2.	Add the bananas, mylk, and all the extras if you’re feelin’ fancy.

	3.	Blend until smooth, then cook on a lightly oiled pan over medium heat until golden on both sides.

Top with nut butter, berries, or a drizzle of maple syrup 🍁
