Jules Fuel Buckwheat Bliss Balls | Blueberry Cacao or Matcha

Meet your new travelling adventure buddies. These Jules Fuel Buckwheat Bliss balls are packed with superfood goodness with a mega-dose of antioxidants.


On the plane, in a camelback or pocketed on a ski day… they’ll save you and your low energy anywhere, anytime.
And they’re SO simple to make.
You’ll find some date ball recipes on here already like these Maca Date Balls or Hemp Coconut Balls , but these ones are special cuz they’re Jules Fuelled ;0)


My cereal company recently turned into a line of superfood breakfasts. The original (Jules Fuel Quinoa Superfood Oatmeal) has been breaking fasts since 2013. But, just last month 2 new Buckwheat Overnight Oat products graced the grocery store shelves!


Your choice of…Matcha Date Overnight Buckwheat Oats, or Blueberry Cacao Overnight Buckwheat Oats.


Both are bursting with antioxidants, plant protein, fibre, phytonutrients and flava flave. On the bag I tell guide you to soak your serving of buckwheat oats overnight in your favourite mason jar with your favourite plant-based mylk.
But today we’re switching it up a bit.


Adding dates to the mix allows you to roll it up into a bunch of 2-bite Jules Fuel balls for all your on-the-go energizing needs.
The buckwheat groats stay in tact to add a satisfying crunch to the texture, and the only thing you have to do is blend and roll. Triple (or quadruple) this recipe and keep them in your freezer for months!


Benefits:

  • Buckwheat is packed with all essential amino acids, creating a protein packed grain that gives you long lasting energy and regulates blood sugar levels by mimicking the action of insulin. It’s also alkaline to your body, and packed with B vitamins (to help your nervous system function optimally).
  • Blueberry & Cacao are both incredibly high in antioxidants to deactivate free radicals in your body (which are the culprits that lead to disease) plus counteract pollution and unstable molecules. This all leads to longevity by slowing the aging process! Antioxidants also help decrease cholesterol and fat accumulation (gotta love em’)! Cacao, which is the raw form of chocolate, is also well-known mood enhancer.
  • Matcha is highly beneficial ground up green tea leaves. It contains L-theanine, which is known to aid in cancer treatments by helping fight tumours. It’s way up there in the antioxidant count, highly energizing without the caffeine jitters, revs up your metabolism and detoxifies naturally. At the same time as being energizing, it calms the mind and relaxes the body. Plus, it’s rich in vitamins, fibre and chlorophyll.
  • Dates are mother nature’s candy (thanks Ma!). Since they’re incredibly high in minerals and vitamins, plus packed with fibre, they’re the best option for sweetening anything that needs some sweetness.

These bliss balls are perfect to take on your next adventure, your next travel day, or even just to the office to curb that 4 o'clock dip of energy. They're packed to the nines with antioxidants and whole food energy.

Serves: 20
Ingredients
  • 8-10 medjool dates (depending on size)
  • 1 cup Jules Fuel overnight buckwheat oats (matcha date, or blueberry cacao)
Instructions
  1. Put all ingredients into your food processor.
  2. Blend for about a minute, or until the mixture resembles a crumbly granola. You should be able to pick some up, squish it, and it will stay together.
  3. Roll into 1-inch balls.
  4. Store in freezer or fridge.
  5. Take them with you for your next adventure, a long day at the office, or travel day!

Creamy Vegan Spinach Artichoke White Bean Dip | 8 Ingredients

Creaminess alert! I’m in love with this Vegan Spinach Artichoke Dip.

White beans come into play to create that creamy texture you’re craving, minus the dairy.

If you come across this dip in the store, the veg-sounding name will probably fool ya. The usual culprits show up in full force in the store-bought version… cream cheese, sour cream, mayo, and parmesano. Yup, it’s an overload of the type of creaminess that won’t do your body any favours.

That brings me to one of life’s must-knows.

 

There are 2 important aspects of the act of eating. The physical side & the mental side.

The way you love and appreciate your food makes a big difference in how your body is going to assimilate those nutrients. If you’re stressed out or worried about that thing you’re eating while you’re eating it (‘oh god, I shouldn’t be eating this…’), your digestion won’t run smoothly (because your adrenal system ~ AKA, your stress centre ~ simply cannot work at the same time as your digestive system).

Step 1 – you’ve got to love the taste.

Step 2- you’ve got to appreciate the food and feel good about eating it.

 

It’s a lot easier to follow through with step 2 when the food you’re eating is actually good for you, and it helps when it doesn’t taste like cardboard, am I right!?

That’s what it’s all about here. This dip is even better than ‘guilt-free’, I’ll go as far as saying it’s a ‘life-giving’ dip. It’s next-level awesome for your taste buds and your health.

And oooh man, does it ever taste good warmed up with a side of rye sourdough, crackers and veggies.

The white beans give this dip the dip-able texture we’re looking for.

Don’t limit it to a dip! Spread it all over your toast, sandwiches, wraps, or even make it into a pasta sauce by adding almond milk!

 

There’s just two steps to get to this deliciousness.

Bake

… that’s it.

 

Benefits:

  • White beans (cannellini beans) are of the legume family. Enough said. Legumes have tons of antioxidants, inulin fibre (prebiotics), minerals, vitamins, and protein. They’re low in fat, cholesterol, and calories (in comparison to the meaty alternative). This is your time to get in yo’ beans! Soak them first, then rinse if you feel that you get gas from them.
  • Artichokes = antioxidants. They’re #7 on USDA’s antioxidant-rich foods list! Plus, Vitamin C in artichoke is going to help you absorb the iron in the spinach. What a combo.
  • Spinach. We all know it’s Pop-Eye’s fave. Why wouldn’t it be? It’s packed with the good stuff (iron, water content, fibre, plant protein, chlorophyll, plus… niacin, manganese, zinc, vitamins A, C, E and K, thiamin, vitamin B6, folate,potassium, calcium, magnesium, phosphorus, copper), but missing the bad stuff (saturated fat & cholesterol). A recipe for Pop-Eye’s physique.

 

Spinach Artichoke White Bean Dip | Vegan

This dip is easy, but so impressive. We're keeping it on the lighter side by using beans as the base instead of nuts. It's creamy and delicious!

Recipe type: dip, appetizer, spread
Serves: 6
Ingredients
  • 1 can white cannellini beans (drained and rinsed)
  • ½ cup + 2 tbsp nutritional yeast
  • 1 tbsp onion powder
  • 3 cloves garlic
  • 2 tbsp lemon juice (about a ½ lemon)
  • ¼ tsp salt
  • 1 cup packed spinach, roughly chopped
  • 1 cup artichoke hearts (about 1 can, drained), roughly chopped
Instructions
  1. Pre-heat your oven to 375°F.
  2. In your food processor, blend beans with ½ cup nutritional yeast, onion powder, garlic, lemon juice, and salt.
  3. In an oven safe serving dish, mix the bean mixture with the spinach and artichokes.
  4. Cover with tin foil, then bake for 12 minutes.
  5. Take the foil off, sprinkle with extra nutitional yeast (or vegan parmesan like Violife's or this recipe) and broil on high for 2 minutes.
  6. Serve this saucy goodness up with your favourite raw veggies, chips, crackers...you name it.

Roasted Garlic Oil-Free Hummus

Roasted garlic hummus is a staple that should be waiting for you in your fridge at all times.

Spread it, dip it, smother it all over everything.

Even add a tablespoon to some water, and voila: salad dressing!

The flavour and texture of this hummus is on point, and will bring any bland sandwiches, wraps, macro bowls, or veggies to life.

What I love about this hummus, is the oil-free action. Unless you’re suffering from heart disease, you’re fine to have some oil here and there. But when it comes down to it, oil is refined fat with the fibre and water content stripped from what ever  whole food ingredient it’s made of. I always say to eat the whole food instead of the refined version (olives, instead of olive oil, sesame seeds instead of sesame seed oil, flax seeds instead of flax oil, avocados instead of avocado oil… you get my drift).

Adding oil to dressings and sauces is a good way to gain some weight if you need to, but limiting it by making versions of your favourite condiments without oil is a great way to shed some pounds, if that’s what you’re going for.

I personally can’t stop dipping my veggies if there’s hummus kicking around. So, the less refined fat calories there are in the stuff, the better (keep on dippin’ baby!)

The roasted garlic gives this hummus a creamy feel and deep flavour.

Other magical ingredients to add to your hummus for flavour, minus the oil, are:

  • miso paste
  • tamari
  • nutritional yeast
  • coconut aminos
  • pickle juice
  • Worcestershire sauce
  • fresh herbs and spices (dill, paprika, cumin, curry, chipotle, parsley, chives…)
  • Sriracha

 

Roasted Garlic Oil-Free Hummus

A hummus with exceptional flavour, but no refined oils, so you can snack on for days.

Recipe type: snack, appetizer
Serves: 1 cup
Ingredients
  • 1 can chickpeas, drained (keep aquafaba/chickpea liquid in your fridge for other recipes)
  • 1 head of garlic
  • 2 tbsp tahini
  • 1 tbsp miso paste
  • Juice of 1 lemon juice (about ¼ cup of juice)
  • Optional: Nutritional yeast to taste (for a cheezier flavour)
Instructions
  1. Heat the oven to 375°F
  2. First, cut off the top of the head of garlic (so you can see the tops of each individual clove).
  3. Peel off the loose outer layers of garlic paper and wrap it up tight in aluminum foil
  4. Place it in the middle rack and roast for approximately forty-five minutes or until you can easily pierce the garlic with a sharp knife. The cloves should look caramelized and brown.
  5. Squeeze the roasted garlic cloves out and add them to a food processor with all the other ingredients.
  6. Blend until smooth!

Vegan Chocolate Chip Oatmeal Cookies | Chewy and Crispy

Finally! A vegan chocolate chip oatmeal cookie recipe that my guy approves of.

These are crispy on the outside, chewy on the inside, healthy, and simple enough to make every week!

So much YES!

The cookie jar must always, always be full, after all.

I tried replacing the coconut oil with banana, but it didn’t have the crispy-ness we were looking for. So, coconut oil and almond butter make up the majority of the liquid part of this cookie, with oats being the star of the dry ingredients.

There is something SO special about baking cookies.

Maybe it’s the nostalgia. Maybe it’s the smell. Maybe it’s the fact that you can eat the cookie dough as you go (one of the many perks of veganizing everything)!

What ever it is… I like it. ‘I like it a-lot’ (insert Arnold accent here).

And I think Davey likes it even more, especially when this recipe gets pumped out of the kitchen.

I had him blind taste-test the options: banana vs. coconut oil… 10 minutes vs. 12 minutes…well, he lived up to his taste-tester role in the kitchen and concluded that the best version of this cookie recipe features good ol’ coconut oil and a couple more minutes in the oven. 

I have to mention… These go real well with this homemade Hemp Milk recipe (no straining needed, and literally the easiest plant-based milk you can make at home). Because let’s face it, what’s a cookie without the dunking?

Benefits:

  • Almond butter is a good place to go for your Vitamin E needs. Why do we need Vitmain E? It’s key for healthy skin, eyes, and a strong immune system. It’s also a strong antioxidant, to help ward off disease!
  • Chia is one of the best ways to get your omega 3s, it gives you all essential amino acids, plus it’s packed to the nines with vitamin K (which helps calcium travel throughout the body, making it great for bone density and essential for healing from injuries).
  • Oats have a complete amino acid profile, containing all essential amino acids. They’re also packed with manganese, which you need for fat and carbohydrate metabolism and brain & nervous function. Not to mention they’re packed with fibre, yet low in fat, making them a good option for knockin’ off the pounds.

 

Vegan Chocolate Chip Oatmeal Cookies

Finally a crispy cookie that's chewy on the inside. Perfect for dunking in that almond milk.

Recipe type: dessert, snack
Cuisine: vegan dessert
Serves: 12-15
Ingredients
  • 1 chia egg (1 tbsp chia seeds, 3 tbsp water, mix together and let sit 3 minutes)
  • ¼ cup coconut oil
  • ½ cup almond butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • 1 cup oat flour (rolled oats blended to a flour)
  • 1½ cups large flake rolled oats
  • ⅛ cup cane sugar
  • ½ tsp baking powder
  • ⅛ tsp sea salt
  • ½ cup vegan chocolate chips
Instructions
  1. Make your chia egg.
  2. Preheat oven to 375°F.
  3. Line your baking sheet with parchment paper.
  4. Whisk the coconut oil, almond butter, maple syrup, chia egg and vanilla together until creamy.
  5. Add oat flour, oats, sugar, baking powder, and salt and mix thoroughly.
  6. Add the chocolate chips.
  7. Shape small balls of dough into a ball, flatten with your hand onto the parchment covered pan.
  8. Bake for 12 minutes.
  9. Let sit on cookie sheet 5 minutes, then transfer to a cooling rack.
  10. Keep in a high, hard to reach cookie jar in your cupboard.

Garlicky Dill Pickle Kale Chips

An abundance of kale + pickle cravings = Dill Pickle Kale Chips!

 

It was like a light flicked on when this combo popped into my head.

Dill pickle anything? Amazing.

But, on Dill Pickle Kale Chips? YES.

There’s an on-going mission to find a crunchy, salty, crispy snack that’s actually good for the bod’.

That hand-to-mouth satisfaction is what all humans crave from time to time… or all the time.

With all of this kale bursting out of my garden, I think I’ve found it.

Here’s a great way to get all of that satisfaction with out the ‘potato chip guilt’.

Not to mention the dill flavour is off the hoooook!

Get your hands in there and let me know how you like it.

Kale Chip Tips:

  1. Make sure the kale is dry to begin with
  2. Single layer it
  3. Tear the kale into large chunks (not too small because they shrink)
  4. Load up on the dressing
  5. If using an oven – us parchment paper for crispness
  6. Don’t over bake them in the oven. They can go from perfect to burnt in a matter of a couple minutes
  7. Store in a tupperware with dry rice to keep your chips crispy! (more on this below)

Garlickly Dill Pickle Kale Chips

Serves: 4-6 snackers

Prep Time: 2 hours soaking time, 10 minutes hands-on

Cook Time: Oven ~ 20 minutes OR Dehydrator ~ 6 hours

Ingredients:

  • 2-3 large heads of kale, de-stemmed, torn, rinsed and spin-dried

Sauce ingredients (use on it’s own for dressing, or sauce to add tang to any savoury dish!)

  • 1 cup cashews, soaked 2 hours then strained
  • 3/4 cup dill pickle brine
  • 2 dill pickles
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic
  • 2 tbsp dill spice OR 5 sprigs fresh dill

Directions:

  1. If using oven, pre-heat to 300 °F
  2. Add all sauce ingredients into blender or food processor. Blend until smooth.
  3. With your hands, massage the sauce into the torn kale
  4. If using the:
    • dehydrator: Spread dressed kale out on dehydrator sheets in a single layer. Dehydrate for 5-6 hours at 115°F
    • oven: spread dressed kale out on parchment covered pan in a single layer. Bake for 9-12 minutes, flip kale, then bake for another 10. Your oven may be slightly different, so be sure to check the kale chips near the end so they don’t burn!
  5. Munch away!
  6. Storage: Sprinkle some dry rice at the bottom of the tupperware, and store kale chips in that tupperware in the fridge for the week. The rice will absorb the moisture and keep your kale chips crispy!

Tofu scramble for the win again.

This time I used all three tofus 👌
One each: firm, medium, and soft.
It made the best scramble texture.

How to:
	•	Sauté ½ red onion, 2 minced garlic cloves, 8 chopped mushrooms, and 1 orange pepper

	•	Add 1 tbsp @shaniseasoning vegan egg spice
