Smokey Vegan Parmesan | Ready in 3 minutes

This smokey vegan parmesan goes well with anything, and I mean ANYTHING savoury.

It has to be in the fridge at all times, ready to get it’s sprinkle on.

There’s nothing like a little smoky saltiness to add pizzazz to any meal.

Your next pasta, salad, tofu scramble, sandwich or wrap will welcome this parm with open arms.

The one thing people seem to miss most during the transition to plant-based eating… CHEESE, because it’s physically addicting. Casomorphins in dairy create an opioid effect to keep the calf coming back for more from her cow Mama. When milk is made into cheese for human consumption (it takes 10 lbs of milk to create just 1 lb of cheese), the casomorphins are concentrated to high levels and create a strong opioid effect, that keep us coming back for more. Once you’re separated from the addiction for a bit, you’ll be over and and see cheese for what it really is… Check out this post for more on that.

It’s becoming easier and easier with all of the amazing vegan cheese companies coming out with innovative, melty, flavourful, creamy, cheeses! And this recipe gives a cheesiness to any recipe.

When it comes to parm, I think VioLife makes the best store bought vegan version. But, when you don’t have any of that kicking around, you can resort to this smokey vegan parmesan recipe!

The smokiness adds a deep deliciousness to your typical parmesan flava flave.

Benefits:

  • Cashews provide you with 100% of your copper needs! Copper helps with the reactions needed for the metabolism of iron, energy production, and neurotransmission. They’re also packed with vitamins E for healthy skin and bones!
  • Paprika is ground up red pepper! It’s packed with antioxidants, and is very anti-inflammatory.
  • Sunflower seeds are also an amazing source of copper and vitamin E, as well as B1. Vitamin B1 helps the breakdown of fats and protein, and vastly improves the cardiovascular functioning of the body.

This is your next meal's best friend. Sprinkle this stuff on anything to enhance any kind of savoury dish.

Ingredients
  • ¾ cup raw cashews
  • 1 tbsp sunflower seeds
  • ¼ cup nutritional yeast
  • 1 tsp garlic powder
  • ¼ tsp smoked paprika
  • ¾ tsp sea salt
Instructions
  1. Blend all ingredients in a mini food processor, blender or spice grinder until you reach the consistency of parm! You shouldn't need more than 30 seconds.
  2. Store in the fridge for up to 3 weeks.

** This goes great with Simple Green Curry, Butternut Mac n’ Peas, Whole Roasted Cauli, Curried Collard Greens, Mashed Potato Butternut Swirl, and the Green Machine Curried Zucchini Hummus.

Curried Collard Greens with Sweet Potato

For those times that your fridge is bustin’ at the seams with greens.

I had this problem (not really a problem) at the end of this growing season. The garden created SO MANY GREENS, I didn’t know what to do with them.

Do you have this problem ever?

If so, here are some good ideas for you:

  • Kale chips or collard green chips
  • Chop and freeze for your smoothies or soups
  • Use them as wraps
  • Use this recipe to curry them up and stew them down!

This recipe does an awesome job of compressing a countertop full of greens into a pot of green goodness.

Benefits:

  • Greens are packed with protein and fibre. Keeps those muscles ripped, and your digestion smooth
  • Collard greens and kale are part of the cruciferous family, making them incredibly detoxifying and anti-inflammatory
  • Turmeric and ginger act together as an anti-inflammatory and antibiotic.


Curried Collard Greens + Sweet Potato

A delicious way to eat as many greens as your pot can handle.

Recipe type: dinner, lunch
Serves: 8
Ingredients
  • 1 sweet potato, diced
  • 2 sweet onions, diced
  • 3 cloves garlic, minced or pressed through garlic press
  • 2 tbsp miso paste
  • 1 tsp ginger powder
  • 1 tsp turmeric powder
  • ½ can coconut milk
  • 1½ cups water
  • As many collards and kale you can fit in your pot, de-stemmed and chopped
  • Vegan parmesan from this recipe
  • Sunflower seeds to top
Instructions
  1. Pre-heat oven to 375 F
  2. Bake sweet potato for 20 minutes (on parchment paper covered pan)
  3. Meanwhile, oil-free sauté onions and garlic for about 10 minutes (heat frying pan to medium, add chopped onions, let sizzle for 2 minutes, then add ½ cup water to get the caramelization off the pan, add a bit more water if it's still sticking after a few minutes).
  4. Add miso, ginger, turmeric and coconut milk. Mix until combined.
  5. Add 1 cup of water and all the greens.
  6. Simmer for 20 minutes, stirring a couple of times.
  7. Add sweet potato to greens just before they're done simmering.
  8. Serve in your favourite bowl and top with vegan parm and sunflower seeds

Vegan Chicken Caesar with Sweet Potato & Caramelized Onion

This is mine.

I went plant-based a decade ago after multiple knee surgeries to calm inflammation, and stayed for the animals and the planet. As a former Olympian, holistic nutritionist and plant-based chef, my goal is simple: meals that fuel you, (each calorie counts towards making sure you’re thriving in this life), must taste amazing and don’t take all night.

This one is creamy, savoury, crispy, and packed with protein. 

💡 LIFE HACK: 
I always double or triple my recipes so I have leftovers for throw together dinners or lunches later in the week (think wraps, bowls, mega salads). So when I say 2 yams, I’m actually roasting 4 to 6! Future you will thank present you.

R E C I P E 👩‍🍳

INGREDIENTS

🌱 2 yams
🌱 2 yellow onions
🌱 2 cups soy curls
🌱 Splash of Bragg’s liquid aminos
🌱 2 heads romaine
🌱 1/2 Red onion, thinly sliced
🌱 Capers
🌱 1 avocado

Caesar Dressing
🌱 1 can cannellini beans, liquid poured out 
🌱 1 tbsp miso paste
🌱 2 tbsp nutritional yeast
🌱 1 clove garlic
🌱 1/4 cup pickle juice
🌱 Salt and pepper

DIRECTIONS

1. Heat oven to 400°F. Slice the onion in half and trim off the tip. Poke the yams and trim the ends.
2. Place on a lined baking sheet and bake 45 minutes, flipping the yams halfway.
3. Soak soy curls in water for 10 minutes, then strain.
4. Fry in a teeeeny bit of oil with a splash of Bragg’s for about 4 minutes, stirring so they brown on all sides. A couple batches.
5. Blend all dressing ingredients until smooth.
6. Toss romaine with the dressing, then add red onion, capers and avocado.
7. Plate the salad, top with yam rounds, peel the caramelized onion into the centre, and finish with the soy curl chicken.

Dinner tonight? Tofu Poke Bowl 🎉👌 🌱 🌱Base: Brown Dinner tonight? Tofu Poke Bowl 🎉👌 🌱

🌱Base: Brown Rice (added artichokes, butter beans, green peas, tamari or @bragg aminos at the end).

🌱 Tofu Poke: (firm, chopped) tossed in tamari, maple syrup, Dijon, smoked paprika. Then tossed again in corn starch. Baked for 20 mins at 400 flipped half way. 

🌱Salad: dressing is pickle juice, Dijon, nooch, a little maple syrup.

🌱Toppers: capers, nori sheets, sesame seeds, avo, sauerkraut, sprouts.

🌱 Sauce: butter beans, cannellini beans, miso paste, nooch, pickle juice. Blend!!
