How to Make an Aquafaba Whipped Cream Parfait | Blueberry Matcha | Raw Vegan

If you’re breakfast looks like this, your day is complete by 9am. This raw vegan aquafaba whipped cream parfait is taken to the next level with a snickers bar made by the lovely Laura.

And even though it’s whipped cream for breakfast, it’s still good for you.

But, how?

~ The snickers bar created by the raw vegan treat pros over at Little Tucker is raw, vegan and made with nuts, dates, some maple syrup… and it tastes heavenly because these girls got skills!! If you’re going to be at Veg Expo this weekend at the Vancouver Convention Centre, go say hi to Laura and the girls to sample some of their goodness.

~ The whipped cream is made of the magical ingredient, aquafaba. Yup, the juice of the chickpea, that’s right. You threw that down the drain without thinking twice before you read this, didn’t you? Don’t worry, I did too. Aquafaba creates a wonderfully stiff, yummy, and very low calorie alternative to your typical whip. It’s also a great egg-replacer in vegan baking (3 tbsp = 1 egg).  Who knew?!

~The base is made from my breakfast cereal, Jules Fuel. Matcha Date and Blueberry Cacao Overnight Buckwheat Oats that I soak in homemade hemp milk, or any kind of plant based milk kickin’ around. It’s packed to the rim with antioxidants, vitamins, minerals, plant protein, and fibre. You can order it internationally from Vegan Supply, or locally at Spud Vancouver.

Layer it all up with some fresh berries and you’ve got yourself a true breakfast of champs.

Not your typical parfait! Aquafaba whipped cream, matcha blueberry oats, and a raw vegan snickers bar to top it all off!

Ingredients
  • ½ cup Jules Fuel Matcha Date Overnight Buckwheat Oats
  • ½ cup Jules Fuel Blueberry Cacao Overnight Buckwheat Oats
  • 1 cup plant-based milk of choice (I used this hemp milk)
  • Fresh berries
  • Little Tucker Raw Vegan Snickers Bar, chopped

  • Aquafaba Whipped Cream:
  • ¾ cup aquafaba/chickpea liquid (this is around the amount of liquid from a 398ml chickpea can)
  • ¼ cup coconut sugar
  • ½ tsp cream of tartar
  • 1 tsp vanilla
Instructions
  1. In separate jars, soak ½ cup blueberry cacao Jules Fuel with ½ cup plant milk, and ½ cup matcha date Jules Fuel with the rest of the ½ cup of plant milk for at least 30 minutes (overnight if you can!!)
  2. Make Aquafaba Whipped Cream: add all whipped cream ingredients to an electric hand mixer with the whisk attachment. Mix on high for at least 5 minutes. The longer you mix, the stiffer it will become! Watch the magic happen.
  3. In 2 jars, scoop in one of the Jules Fuel oats, then some berries, then some whipped cream, then another layer of the other Jules Fuel oats, then go crazy with the whipped cream, and top it all off with the snickers bar.
Notes
Store extra whipped cream in the freezer, and use as you would 'cool whip'. Keeps for one month

Gooey Vegan Sweet Potato Brownies + Choco Frosting | GF + Oil-Free

Gooey, decadent brownie indulgence, without rebelling from your ‘eating clean’ regime. These healthy, oil-free, gluten-free, vegan sweet potato brownies are so downright delectable that you’ll feel as if you’re re-living that brownie experience you had at the grade 4 bake sale (that one packed with alllll the sugar and butter).
Well nope, this one is gluten-free (just use gluten-free oats), vegan (always), and free of refined oil.
It’s packed to the frosting with unrefined whole foods!
Dates for the sweetener, sweet potatoes for the nutrient-dense filler, and almond butter for the density.
These brownies aren’t too sweet, and they go AMAZINGLY with nana’ nice cream!
But, what’s a brownie without a topper? This Chocolate Date frosting is thick and creamy with only whole food ingredients. Date paste is the magic that creates a frosting that’s a sweet, spreadable answer to cure that sweet tooth craving.
Let’s talk protein for a sec.
First of all, these brownies are packed with protein.
Surprisingly:
1 cup of sweet potatoes = 6 grams of protein
1/2 cup of oats = 5 grams of protein
1/4 cup almond butter = 13 grams of protein
Each of these ingredients has a bit of all 9 essential amino acids, too (plug it in on cronometer).
Around 42g of protein per day is more than enough for the average person (about 0.8g/kg of body weight).
Too much protein, on the other hand, is very hard on the kidneys, plus it leads to weight gain, water retention and poor digestion.
So? You can stop worrying about whether or not you’re getting enough protein throughout the day. You will most likely be getting much more than 42g of protein, or around 10-15% of your entire diet coming from protein on the plant-based lifestyle, as long as your eating enough calories (not starving yourself). Plant protein is easier to digest, and we can get all the essential amino acids we need from plants.
Where do you think the muscular Gorillas, Elephants, Rhinos and Horses get their protein?
Rather than having the cow eat the plants to grow meat for humans to eat, let’s get straight to the plant source and stop using the animal as the middle man.
As for complete protein, you don’t need to worry about combining plants on your plate to ensure you’re getting a full spectrum of amino acids in one meal (the rice and bean theory). As long as your eating a variety of whole plant foods, and enough of them, your body will store excess amino acids in the amino acid pool, and release these amino acids to form complete proteins when ever it’s needed throughout your week!
One more thing to think about. Protein doesn’t come on it’s own…it comes as a package.

We can stop worrying about protein and ask the new question: where do you get your fibre? (Most people are low in this SUPER important nutrient)
Whole plant foods are packed with this F-bomb. And these brownies are a good place to start!

Brownie benefits:

  • Sweet potatoes are queen in my eyes. They’re packed with vitamins, minerals, antioxidants, and taste like heaven on earth. They’re incredibly sweet for a tater! Vitamin A for your eyes, B vitamins for your nervous system, manganese for your bones and fat metabolism, and potassium to lower your anxiety and stress levels.
  • Dates are packed with fibre and minerals. They’re essential if you need to move things along, if you know what I mean. The mineral content in these babies is amazing for your bones, and they are the best whole food sweetener you can find.
  • Tapioca flour is a flour made from the cassava root, so it’s naturally free of gluten. It’s amazing in baking because it gives anything a dense, chewy texture!

Sweet Potato Brownies | Oil-Free, GF, Vegan

Sinful tasting brownies without the sins. Goo-ey, decadent, and chocolate-y. These are a go-to for a healthy snack, or a delicious dessert.

Ingredients
  • 12 medjool dates, soaked 5 minutes and strained (keep the liquid!)
  • ½ cup smooth nut butter of choice (I used almond butter)
  • 1 chia egg or flax egg (1 tbsp chia seeds or ground flax + 3 tbsp water)
  • ⅛ tsp sea salt
  • ¼ cup raw cacao powder (standard cocoa powder works too)
  • 1 tbsp tapioca flour (or tapioca starch)
  • 1 cup oat flour (just blend 1 cup rolled gluten-free oats to a flour in your blender)
  • 2 medium-sized sweet potatoes, poked with a fork (will become about 1 cup mashed)

  • Frosting:
  • ¼ cup date paste (left over from brownie mix, see below)
  • ½ cup nut butter
  • 1 tbsp cacao powder
  • 3 tbsp plant-milk (I used vanilla unsweetened almond)
Instructions
  1. Preheat the oven the 350°F, line a 7"x7" (approx.) cake pan with parchment paper and set aside.
  2. Cook sweet potatoes: Either bake for 45 minutes (or until soft), flipping once. Once cooled enough to handle, scoop out the meat and discard (or eat) the peel. (Another option is to steam the potatoes: Peel, then chop into ½" cubes, then place in steamer for 30 minutes).
  3. Meanwhile in your blender, make the date paste by blending all medjool dates with ½ cup of the left over date soaking liquid. Once smooth, remove ¼ cup of the date paste and set aside (for the frosting baby!)
  4. Add the nut butter, chia egg, salt, tapioca flour, oat flour, sweet potato and cacao powder to the date paste in the blender. Blend until smooth (use your tamper to help it along). Another option is to mix by hand in a big bowl.
  5. Pour the mixture into the parchment covered pan and bake for 30 minutes (or until a toothpick comes out clean).
  6. Meanwhile, make the frosting: Blend the left over ¼ cup of date paste with nut butter, cacao powder and plant milk until smooth.
  7. Remove brownies from oven, let cool 10 minutes.
  8. Flip upside down onto a serving plate and spread frosting over the top. Sprinkle with walnuts.
  9. Place it in the fridge for 10 minutes to solidify the frosting. Then slice and enjoy!
  10. Can be stored in the fridge for up to a week, or in the freezer for months.

St. Patrick’s Day Deep Green Cauliflower Spirulina Smoothie Bowl

St. Paddy’s Day is just around the corner, so it’s time to get in as much of the colour green as humanly possible with this cauliflower spirulina smoothie bowl.

Make this uber healthy, nutrient-dense breakfast so you can happily balance it out with that green beer later!

Warning: The energy you’ll receive from this bowl o’ goodness might have you dancing on tables to those Irish fiddles until the sun comes up.

This recipe is pretty much the most amount of nutrients you can fit into your blender, blended into a thick smoothie bowl and topped off with any kind of superfoods you have in the house!

Smoothie bowls are a go-to around here.

Smoothies are great too, but bowls are better. Why? Smoothies go down too quick (unless you’re mindfully paying attention to chewing your liquid). It’s good to take your time eating blended anything, and actually CHEW your smoothie. Sounds weird, I know. But, by chewing, your mouth releases saliva with amylase (the digestive enzyme for carbohydrates). This is where it all begins (digestion, that is), so if you skip this step of physically chewing, the food by-passes the mouth without the first initial breakdown of nutrients. This makes it harder on the rest of your body during the digestion process.

Chew yo’ smoothie!

You might be thinking… Cauliflower in a smoothie WHAT?! But seriously, it creates a creamy texture and adds mega benefits. We should be eating something from the cruciferous family on the daily (cauli, broccoli, cabbage, kale, brussel sprouts, bok choy, collard greens…), and this is an easy way to get it in ya.

Benefits:

  • Spirulina is one of the most detoxifying ingredients you can consume! It’s a blue green micro-algae with magical powers. Plus, it’s 60% protein (!) and packed with vitamins K1, K2, B12, A plus minerals iron, manganese and chromium. It’s extremely potent, so you don’t need much of it to reap the benefits. The antioxidants and phytonutrients will help decrease signs of aging and ward of disease and inflammation.
  • Cauliflower as I said earlier is a member of the cruciferous vegetable fam. This family is packed with disease-fighting phytochemicals, drastically lowering your rise of cancer and cell oxidation.
  • Greens of any kind are king when it comes to nutrient density. Chlorophyll, phytonutrients, antioxidants, fibre… these are all ingredients your body thrives on. You’ll be bursting with energy and vitality if you pack your mouth with greens at any chance you get.

 

St. Patrick's Day Green Cauliflower Spirulina Smoothie Bowl

I always wing it when it comes to smoothies! But, this gives you a good idea of proportions for a deep green smoothie bowl! Feel free to add more or less of anything, it will all work out. If you need more sweetness, add more dates or banana! Try to pack in as many green leaves as possible.

Ingredients
  • 2-3 kale leaves, de stemmed
  • 1 cup spinach
  • 1-inch thumb of ginger root
  • 2 frozen bananas (3 if they're small!)
  • 2 medjool dates
  • 1 cup frozen cauliflower
  • 1-2 cups frozen berries (your choice)
  • 1 tsp spirulina
  • 1½ cups vanilla almond milk, or thishemp milk

  • Optional add-ins:
  • More Greens if you can handle it! Spinach, cucumber, celery, romaine...
  • 1 inch thumb turmeric root
  • Water (if you want a drinkable smoothie)
  • Your favourite vegan protein powder
  • Carrot
  • Apple

  • Recommended toppings:
  • Raw cacao nibs
  • Coconut shreds
  • Jules Fuel Buckwheat Oats
  • Banana
  • Hemp seeds
  • Omega 3-6-9 oil (Udo's has a good blend, and an option with DHA too!)
Instructions
  1. Fill your blender with all the smoothie ingredients in this order: ginger, greens, cauliflower, spirulina, berries, banana, dates, almond milk.
  2. Blend on low-medium, and use your tamper to help the consistency become as smooth as possible. Add a bit of water if needed to help blend.
  3. If you don't have a tamper for your blender, just add a bit more liquid so it blends on it's own (you'll just have a runnier smoothie bowl)!
  4. Pour into your favourite bowl, and top it with your favourite toppings!
Notes
** You can use unfrozen bananas and cauliflower, but it won't be quite as creamy or delicious...

Jules Fuel Buckwheat Bliss Balls | Blueberry Cacao or Matcha

Meet your new travelling adventure buddies. These Jules Fuel Buckwheat Bliss balls are packed with superfood goodness with a mega-dose of antioxidants.


On the plane, in a camelback or pocketed on a ski day… they’ll save you and your low energy anywhere, anytime.
And they’re SO simple to make.
You’ll find some date ball recipes on here already like these Maca Date Balls or Hemp Coconut Balls , but these ones are special cuz they’re Jules Fuelled ;0)


My cereal company recently turned into a line of superfood breakfasts. The original (Jules Fuel Quinoa Superfood Oatmeal) has been breaking fasts since 2013. But, just last month 2 new Buckwheat Overnight Oat products graced the grocery store shelves!


Your choice of…Matcha Date Overnight Buckwheat Oats, or Blueberry Cacao Overnight Buckwheat Oats.


Both are bursting with antioxidants, plant protein, fibre, phytonutrients and flava flave. On the bag I tell guide you to soak your serving of buckwheat oats overnight in your favourite mason jar with your favourite plant-based mylk.
But today we’re switching it up a bit.


Adding dates to the mix allows you to roll it up into a bunch of 2-bite Jules Fuel balls for all your on-the-go energizing needs.
The buckwheat groats stay in tact to add a satisfying crunch to the texture, and the only thing you have to do is blend and roll. Triple (or quadruple) this recipe and keep them in your freezer for months!


Benefits:

  • Buckwheat is packed with all essential amino acids, creating a protein packed grain that gives you long lasting energy and regulates blood sugar levels by mimicking the action of insulin. It’s also alkaline to your body, and packed with B vitamins (to help your nervous system function optimally).
  • Blueberry & Cacao are both incredibly high in antioxidants to deactivate free radicals in your body (which are the culprits that lead to disease) plus counteract pollution and unstable molecules. Ingredients
  • 8-10 medjool dates (depending on size)
  • 1 cup Jules Fuel overnight buckwheat oats (matcha date, or blueberry cacao)
Instructions
  1. Put all ingredients into your food processor.
  2. Blend for about a minute, or until the mixture resembles a crumbly granola. You should be able to pick some up, squish it, and it will stay together.
  3. Roll into 1-inch balls.
  4. Store in freezer or fridge.
  5. Take them with you for your next adventure, a long day at the office, or travel day!

Creamy Vegan Spinach Artichoke White Bean Dip | 8 Ingredients

Creaminess alert! I’m in love with this Vegan Spinach Artichoke Dip.

White beans come into play to create that creamy texture you’re craving, minus the dairy.

If you come across this dip in the store, the veg-sounding name will probably fool ya. The usual culprits show up in full force in the store-bought version… cream cheese, sour cream, mayo, and parmesano. Yup, it’s an overload of the type of creaminess that won’t do your body any favours.

That brings me to one of life’s must-knows.

 

There are 2 important aspects of the act of eating. The physical side & the mental side.

The way you love and appreciate your food makes a big difference in how your body is going to assimilate those nutrients. If you’re stressed out or worried about that thing you’re eating while you’re eating it (‘oh god, I shouldn’t be eating this…’), your digestion won’t run smoothly (because your adrenal system ~ AKA, your stress centre ~ simply cannot work at the same time as your digestive system).

Step 1 – you’ve got to love the taste.

Step 2- you’ve got to appreciate the food and feel good about eating it.

 

It’s a lot easier to follow through with step 2 when the food you’re eating is actually good for you, and it helps when it doesn’t taste like cardboard, am I right!?

That’s what it’s all about here. This dip is even better than ‘guilt-free’, I’ll go as far as saying it’s a ‘life-giving’ dip. It’s next-level awesome for your taste buds and your health.

And oooh man, does it ever taste good warmed up with a side of rye sourdough, crackers and veggies.

The white beans give this dip the dip-able texture we’re looking for.

Don’t limit it to a dip! Spread it all over your toast, sandwiches, wraps, or even make it into a pasta sauce by adding almond milk!

 

There’s just two steps to get to this deliciousness.

… that’s it.

 

Benefits:

  • White beans (cannellini beans) are of the legume family. Enough said. Legumes have tons of antioxidants, inulin fibre (prebiotics), minerals, vitamins, and protein. They’re low in fat, cholesterol, and calories (in comparison to the meaty alternative). This is your time to get in yo’ beans! Soak them first, then rinse if you feel that you get gas from them.
  • Artichokes = antioxidants. They’re #7 on USDA’s antioxidant-rich foods list! Plus, Vitamin C in artichoke is going to help you absorb the iron in the spinach. What a combo.
  • Spinach. We all know it’s Pop-Eye’s fave. Why wouldn’t it be? It’s packed with the good stuff (iron, water content, fibre, plant protein, chlorophyll, plus… niacin, manganese, zinc, vitamins A, C, E and K, thiamin, vitamin B6, folate,potassium, calcium, magnesium, phosphorus, copper), but missing the bad stuff (saturated fat & cholesterol). A recipe for Pop-Eye’s physique.

 

Spinach Artichoke White Bean Dip | Vegan

This dip is easy, but so impressive. We're keeping it on the lighter side by using beans as the base instead of nuts. It's creamy and delicious!

Serves: 6
Ingredients
  • 1 can white cannellini beans (drained and rinsed)
  • ½ cup + 2 tbsp nutritional yeast
  • 1 tbsp onion powder
  • 3 cloves garlic
  • 2 tbsp lemon juice (about a ½ lemon)
  • ¼ tsp salt
  • 1 cup packed spinach, roughly chopped
  • 1 cup artichoke hearts (about 1 can, drained), roughly chopped
Instructions
  1. Pre-heat your oven to 375°F.
  2. In your food processor, blend beans with ½ cup nutritional yeast, onion powder, garlic, lemon juice, and salt.
  3. In an oven safe serving dish, mix the bean mixture with the spinach and artichokes.
  4. Cover with tin foil, then bake for 12 minutes.
  5. Take the foil off, sprinkle with extra nutitional yeast (or vegan parmesan like Violife's or this recipe) and broil on high for 2 minutes.
  6. Serve this saucy goodness up with your favourite raw veggies, chips, crackers...you name it.

3-Ingredient Banana Oat Blender Pancakes (Protein Packed) 🥞

Ingredients:

	•	2–3 ripe bananas
	•	2 cups oats
	•	1½–2 cups plant mylk (any kind works!)

Also… clean Vegan Protein (use code HookedonPlants for a discount). 

Not mandatory, but fluffy-fies those flapjacks:

	•	1 tsp baking powder
	•	1 tsp baking soda
	•	Pinch of salt

✨ Up-level it:

Add a scoop of Vanilla Protein + Greens from Complement and Immunity Blend Mushroom Powder from Stay Wyld (discount links in bio).

For extra flava-flave:

	•	1 tsp cinnamon
	•	1 tsp vanilla

Directions:
	1.	Blitz the oats into flour in a high-speed blender.

	2.	Add the bananas, mylk, and all the extras if you’re feelin’ fancy.

	3.	Blend until smooth, then cook on a lightly oiled pan over medium heat until golden on both sides.

Top with nut butter, berries, or a drizzle of maple syrup 🍁
