Quinoa Superfood Oatmeal!
Ingredients: quinoa, oats, goji berries, chia seeds, pumpkin seeds, flax seeds, raisins, sunflower seeds.
Throughout my skiing career, I realized how important the right kind of food was for healing, continuous health, and constant energy. After I retired from the World Cup tour, my passion for holistic eating grew. During the time I became an RHN (registered Holistic Nutritionist), and Certified Plant-Based Chef, I decided to create Jules Fuel; a rendition of what I used to bring on the world cup tour with me.
This is the original version of Jules Fuel. You cook it all up at once, and you have breakfast for your work week waiting for you in the fridge.

~ Throw all of the superfood fuel (YES, all of it) into a pot.
~ Add 2 cups of water.
~ Crank your stove top to high and bring the goods to a boil (this will take 1-2 minutes).
~ Once it’s hot and bubbling, spin the dial back down to low/simmer.
~ Set the timer for 10 minutes and let it simmer away with the lid on.
~ When the timer beeps, shut it all off and you’ll have close to double the amount of Jules Fuel from when you started (about 6 breakfasts worth)
~ Serve it up with you favourite toppings and enjoy!
~ Top it: freshly chopped fruit (berries, pear, apple, mango, banana…), apple sauce, coconut yogurt, nut butter, maple syrup
~ Once cooled, store in the fridge for up to 10 days
It’s great for snacking by the spoonful… and dessert too.
