Simple Green Curry | Oil-Free | Vegan

Brrrr. It’s cold and time for a fave bowl of Thai comfort and flavour.

This green curry couldn’t get any easier.

Veggies.

Potatoes.

Coconut milk.

Curry paste.

That’s it, that’s all folks!

Plus, it’s oil-free. Why, you ask?

Well, let me tell ya.

Oil is a refined and has more calories per teaspoon than any other food group out there, with minimal nutrients. For the same amount of calories in 1 tbsp of oil (120 calories), we can eat 3 cups of kale, or 4 red peppers, or 4 cups of cauliflower, or 1 cup of potatoes. When we consume 1 tbsp of oil, it takes up a tiny amount of room in our stomach, therefore, won’t do the job of telling our brain that we are full and won’t lead to satiation. So, oil makes it’s super easy to dose yourself with high-fat, nutrient-deficient calories (in other words, gain unwanted weight).

We want as many nutrients, and as much bulk per calorie as possible.

This is great! This means, if we choose the right kinds of foods (whole, un-refined, plant foods), then we can eat in absolute abundance! High fives all-around for that!

Below, you’ll see the way to saute without using oil that gives you a great flavour and caramelization.

Benefits:

Broccoli is like a broom for your intestines. It goes in there and cleans everything up (especially in it’s raw form, but lightly cooked is amazing too. It’s packed with vitamin C and K. It’s detoxifying and anti-inflammatory. As a cruciferous vegetable it’s packed with phytonutrients and fights off cancer and disease.

Onions and garlic have organosulfur compounds that have huge antioxidant properties to ward off disease, oxidative stress and cancer.

Sprouts are the most nutrient dense things you can consume! The opposite of oil. They’re raw and live, easily digestible and packed with nutrients, vitamins and minerals.  Powerful little morsels.

Serves: 6

Time: 30 minutes

Ingredients:

  • large sweet onion, diced
  • 4 cloves garlic, crushed
  • 2cm ginger thumb, minced
  • 2 heads of broccoli, chopped
  • 2 red peppers, chopped
  • 1 can coconut milk
  • 1 jar green curry paste (112 grams)
  • 3-4 potatoes, cubed (could replace with 2 cups brown rice, cooked)
  • 1 cup green peas
  • sprouts for topping (mung bean, peashoots or sunflower sprouts)
  • cilantro, chopped, for topping
  • cashews, chopped, for topping (optional)

Directions:

  1. Steam potatoes until your fork can pierce through them (about 15 minutes). On the other hand, cook up some rice if you like rice more!
  2. Oil-free saute: Heat up a large, deep pan to medium. You know when it’s hot enough be doing the water test (sprinkle pan with water, and if a mercury ball forms, you’re good to go). Add onions to the heated pan. Stir frequently, until the pan is browned (about 5 minutes). Add enough water to de-glaze the pan (the onions should look brown and caramelized).
  3.  Add garlic and ginger. Saute 1 minute.
  4.  Add peppers and broccoli. Saute 1 minute.
  5.  Add half of the coconut milk with the whole jar of green curry. Mix these liquids together with the veggies until the curry is all mixed in. Then add the rest of the coconut milk.
  6. Let simmer for 5-10 minutes. Add in the potatoes and green peas for the last 2 minutes.
  7. Serve it up in your favourite big bowl and top it with sprouts, cilantro and cashews.

Simply Basic Vegan Curry Recipe (Ridiculously EASY)

Stuck for dinner? Craving tastiness? Need some veggies in your life?

DO THIS.

A basic vegan curry AKA… a fool-proof way to get nutrients in your bod’ without having to think.

Switch up the veggies according to the season, your personal vibe, or what ever you may have kicking around in that fridge of yours.

This recipe works with pretty much any kind of potato or veggie…

You could switch out the sweet potatoes for russet potatoes or turnips or butternut squash or pumpkin…

You could switch out the eggplant + cauliflower with carrots, broccoli, peppers, zucchinis…

You could switch out the chickpeas with edamame or red lentils or black beans or kidney beans or peas…

It’s your call! And it’s the perfect way to use up those veggies that have been staring at you in the face for the last week…saying ‘use meeee’!

Ingredients

  • 1 large sweet or yellow onion, chopped

  • 3 cloves garlic, minced

  • 6-8 white or brown mushrooms, sliced

  • 1-2 jars of red or green curry paste (112 gram jars)

  • 1 small can coconut milk (200mL)

  • 1 veggie boullion cube

  • 2 medium-large sweet potatoes, chopped

  • 1 large eggplant, chopped

  • 1 cauliflower, chopped

  • 2 leave kale or 2 handfuls spinach, thinly sliced

  • 1-2 tbsp peanuts (for topping)

  • 3-4 sprigs fresh cilantro (for garnish)

Directions

  • Bring pot to medium heat, then add onions, mushrooms and garlic. Let sauté, and add a bit of water to de-glaze the bottom of the pot
  • After 5 minutes, add the curry paste, coconut milk, boullion cube and a cup of water. Stir until mixed evenly
  • Add the sweet potatoes and eggplant. Add water until the veggies are just covered
  • Bring to a boil, and then turn down to simmer for 30 minutes
  • Add in the cauliflower and greens. Let simmer another 5 minutes
  • To serve, lay down some pre-cooked brown rice or any other grain (or not), and top with peanuts and cilantro!

Notes

  • Goes well with pre-cooked brown rice or quinoa!

Japanese Pumpkin Lentil Curry Stew

T’is the time of the year for hearty bowls of flavourful ingredients…Today, in the form of this nutrient-dense Japanese Pumpkin Lentil Curry.

There’s just something about the words ‘pumpkin’ and ‘curry’ that causes the mouth to water and the comforting vibes to shine.

Oil-free.

Ridiculously simple.

Minimal ingredients.

Lots of benefits.

If you’re wondering what a ‘Japanese Pumpkin’ might be…it’s a Kabocha Squash!

Same, same.

I love love love Kabocha. It’s packed with vitamin A and C, with some B’s in there too. Meaning your eyes, immunity and nerves will all benefit from this sweet pumpkin!

Read on for the easiest way to cook up squash.

This recipe makes a lot, but you could even double it and freeze half to be ready for a stress-free, last minute dinner in that future of yours!


Japanese Pumpkin Red Lentil Curry Stew

A comforting stew, packed with nutrients, flavour and heartiness. Ready for that rustic baguette and hungry people!

Ingredients
  • 1 Japanese pumpkin (kabocha squash), halved with seeds scooped out
  • 1 yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 8 white or cremini mushrooms, diced or sliced
  • 2 garlic cloves, minced
  • 1 small jar of green or red curry paste (used Thai Kitchen curry)
  • 1 can light coconut milk (use the liquid too)
  • 2 cups vegetable broth (or 1 veggie bouillon cube mixed with 2 cups water)
  • 2 cups dry red lentils
  • 2 cups spinach, chopped

  • To serve:
  • Cilantro, chopped
  • Peanuts
  • Brown Rice or Quinoa as the base
Instructions
  1. Pre-heat oven to 400°F
  2. While it's pre-heating, chop your veggies.
  3. Place the halved, de-seeded squash flesh-side down on a parchment covered or a re-usable baking sheet covered pan. Bake for 40-45 minutes.
  4. Oil-free sauté the first ingredients by heating your pot to medium heat, then adding the onion, carrots, celery and mushrooms. Let these sizzle for a few minutes, then de-glaze (un-stick) with a couple tablespoons of water. Continue to do this for about 7 minutes, de-glazing a few times as needed.
  5. To the pot, add the 2 minced garlic cloves and full jar of curry paste. Mix and let sauté a few minutes.
  6. Then add the full can of coconut milk, 2 cups of veggie broth and 2 cups of red lentils.
  7. Mix, bring to a boil, then let simmer for 20 minutes.
  8. Add chopped spinach.
  9. When the Kabocha Squash is done, flip the halves over to let cool for a few minutes, then scoop out the flesh with a spoon and mix it into the stew.
  10. Serve it up! On a bed of quinoa or brown rice with cilantro and peanuts on top!

*Didn't include cooking time or instructions for grain to serve it on. Pre-cooked quinoa, rice, or wheat berries are great!

Whole Roasted Cauliflower with Curry Tahini Sauce | Vegan Main

Whole Roasted Cauliflower is the easiest and one of the most delicious ways to enjoy your cauli!

This flavourful bomb of a recipe can take place of that main roast on the table.

Get those steak knives out, it’s time to carve up the cauli! Said no one, ever… until NOW.

But, you won’t need that steak knife, because this juicy cauliflower cooked to perfection, allows any dull knife to easily make it’s way to the bottom of the dish.

Let’s talk about this sauce. First, it’s massaged into the cauliflower, then it turns into a beautiful and delicious golden crust. Then, the other half of the golden goodness is drizzled liberally over the finished product.

Warning: this sauce may be your new addiction.

I brought this one to a potluck, and it was dubbed the vegan turkey. If you’re bringing it to a dinner, place it in a roasting dish, surround it in kale leaves, and put it in a 300°F oven for 10 minutes when you get there (the kale will turn into kale chips, and your roast will be extra golden).

In just a few steps you’ll have yourself a killer main.

Slice and drizzle.

 

Whole Roasted Cauliflower with Curry Tahini Sauce

One of the easiest ways to prepare cauliflower. It's perfect for an impressive looking main dish!

Serves: 4
Ingredients
  • 1 head cauliflower, wash it and take off the greenery, but leave the stalk on (you may have to trim it for the cauliflower to site flat)

  • Curry Tahini Sauce:
  • ½ cup tahini
  • 3 tbsp maple syrup
  • 1½ tbsp curry powder
  • ¼ tsp sea salt
  • 3 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • ½ cup water
  • ½ cup plain, unsweetened almond milk (or any other plain, unsweetened plant-milk)
Instructions
  1. Pre-Heat oven to 400°F
  2. Meanwhile, make the sauce: blend all sauce ingredients together EXCEPT for the almond milk.
  3. Place cauliflower head, stem-side down, in an oven safe baking dish.
  4. Pour half of the sauce over the cauliflower and spread evenly with your hands over the whole head of cauliflower (except for the bottom).
  5. Place cauliflower back in the dish, and fill the dish with ½ inch of water.
  6. Bake for 50 minutes, or until a knife easily pokes through the centre.
  7. When you take the cauliflower out, heat up the rest of the sauce in a small pot with the ½ cup of almond milk.
  8. Serve the cauliflower with a good drizzle of the the warm sauce!

Curried Collard Greens with Sweet Potato

For those times that your fridge is bustin’ at the seams with greens.

I had this problem (not really a problem) at the end of this growing season. The garden created SO MANY GREENS, I didn’t know what to do with them.

Do you have this problem ever?

If so, here are some good ideas for you:

  • Kale chips or collard green chips
  • Chop and freeze for your smoothies or soups
  • Use them as wraps
  • Use this recipe to curry them up and stew them down!

This recipe does an awesome job of compressing a countertop full of greens into a pot of green goodness.

  • Greens are packed with protein and fibre. Keeps those muscles ripped, and your digestion smooth
  • Collard greens and kale are part of the cruciferous family, making them incredibly detoxifying and anti-inflammatory
  • Turmeric and ginger act together as an anti-inflammatory and antibiotic.


Curried Collard Greens + Sweet Potato

A delicious way to eat as many greens as your pot can handle.

Serves: 8
Ingredients
  • 1 sweet potato, diced
  • 2 sweet onions, diced
  • 3 cloves garlic, minced or pressed through garlic press
  • 2 tbsp miso paste
  • 1 tsp ginger powder
  • 1 tsp turmeric powder
  • ½ can coconut milk
  • 1½ cups water
  • As many collards and kale you can fit in your pot, de-stemmed and chopped
  • Vegan parmesan from this recipe
  • Sunflower seeds to top
Instructions
  1. Pre-heat oven to 375 F
  2. Bake sweet potato for 20 minutes (on parchment paper covered pan)
  3. Meanwhile, oil-free sauté onions and garlic for about 10 minutes (heat frying pan to medium, add chopped onions, let sizzle for 2 minutes, then add ½ cup water to get the caramelization off the pan, add a bit more water if it's still sticking after a few minutes).
  4. Add miso, ginger, turmeric and coconut milk. Mix until combined.
  5. Add 1 cup of water and all the greens.
  6. Simmer for 20 minutes, stirring a couple of times.
  7. Add sweet potato to greens just before they're done simmering.
  8. Serve in your favourite bowl and top with vegan parm and sunflower seeds

15 Minute Protein-Packed Vegan Pesto ChickUn Fettu 15 Minute Protein-Packed Vegan Pesto ChickUn Fettuccine 

1) Soak soy curls in water for 10 mins, then strain and pan-fry in olive oil & @bragg liquid aminos
2) In a pan, sauté 1 onion, lots of crushed garlic, 8-10 sliced mushrooms 
3) Add vegan pesto (used @love.legrand), nutritional yeast, and the pan fried soy curls to that pan. 
4) Boil pasta of choice (drop your fave pasta below… macaroni? Penne? Fettuccini?
5) Strain then pour pasta into the pan of goodness & mixy mixy

This isn’t just any tofu scramble… it’s next This isn’t just any tofu scramble… it’s next-level creamy and eggy thanks to 2 secret weapons:

🥄 Hummus for texture 
🧂 Black salt (kala namak) for that eggy flava flave

Serve it up with avo, tomato, and a drizzle of hot sauce for the ultimate #MothersDayBrunch moment 🥑🔥

🌱 Tofu Scramble Recipe - from the #hookedonplantsarchives 

Ingredients:
	•	½ large yellow onion, diced
	•	2 cloves garlic
	•	6 white mushrooms, sliced
	•	1 red pepper, diced
	•	1 tsp each: garlic powder, onion powder, paprika
	•	½ tsp turmeric
	•	1 tsp cumin
	•	½ tsp black salt (kala namak)
	•	¼–½ cup nutritional yeast
	•	½ cup hummus (use your fave — or try my Roasted Garlic one!)
	•	1 block medium or soft tofu (~350g)

Directions:
	1.	Sauté onion in a hot pan (no oil needed). Let it brown, then splash with water to deglaze as needed.
	2.	Add mushrooms, garlic, and red pepper. Cook for a few minutes.
	3.	Stir in spices + ¼ cup water.
	4.	Add hummus and mix until incorporated.
	5.	Crumble tofu into the pan with your hands (tiny crumbles = perfect texture).
	6.	Stir everything together and cook for a few more minutes until golden and hot.

Top with avo, tomato slices, hot sauce… or wrap it up in a tortilla 🌯

3 main ingredients plus a few powders / spices 👌 

👨‍🍳 Ingredients:
✔️ 3 ripe bananas 🍌
✔️ 3 cups oats (GF if needed)
✔️ 1-1.5 cups plant milk (oat, almond, soy… whatever floats your nut milk boat)
✔️ 1 tsp baking powder
✔️ 1 tsp baking soda 
✔️ 1/2 tsp cinnamon
✔️ 1 tsp vanilla extract
✔️ Pinch of salt
Optional:

1.  Add oats, powders to the blender, and blend to a flour
2. Add milk and bananas, blend until smooth (add a little extra milk if needed & use a tamper to help blend. 
3. Heat a non-stick pan over medium and lightly grease with coconut oil or vegan butter.
4. Pour the batter into the pan (small pancakes work best), cook for ~3 mins until bubbles form.
